Please let me know ASAP if you would like to play this spring. I will also need captains for each team formed. Play starts in March and concludes in early May. January and February can be a tough month on our courts due to freezing temperatures at night. When the temperatures get into the 20’s the courts freeze overnight. Once the temperature rises above freezing they become wet, mushy, and unplayable. If you come to play and your foot makes an indent, the courts are unplayable. Last year the courts were closed sporadically due to the unseasonably cold temperatures. I hope this winter we can have warmer weather in preparation of the 2015 spring league season. Chris was born in Philadelphia, PA and is a die Let’s Celebrate! hard Eagles fan. He served four and a half years in the United States Navy as a boatswain, and graduated from Slippery Rock University with a degree in Health Services Administration. Before joining the WCCC team a year and a half ago, Chris was a General Manager for Applebee’s in Fayetteville, NC. He also spent ten years as a District Manager for Waffle House, where he oversaw the operations of up to twelve restaurants at a time. Although he has had an extremely successful career in the food service industry, Chris’s greatest accomplishment is his two year old daughter Naliyah. Chef Chris is very proud of the new dinner menu that was launched this fall, particularly his Fresh Catch addition which allows him to rotate fresh seafood on a seasonal calendar. By working closely with his distributors Chris has been able to feature fish from all over the world, including Ono from Japan, Mahi from Australia and Chile, and Shark from New Zealand and Hawaii. The Fresh Catch offerings are delivered to the club within 36 hours of being caught, and Chris does his best to keep the cost to the members within reason. In order to provide the very best of the exciting menu, Chris stresses the importance of making reservations as early as possible so that he can be sure to have an adequate supply of food on hand while keeping waste to a minimum. These are the two variables that allow Chris to keep control of his food cost, which is so important to the club’s bottom line. Chris and his team have survived the busy holiday season and are looking forward to some great programs in the new year. They will be offering a gourmet wine dinner, cooking class demonstrations, and a Member-Chef cook off competition just to name a few. Chris is always open to new ideas and suggestions from the membership and would love to hear from you, so feel free to contact him at any time. As we go into the New Year, we have a few drainage projects to work on around the course, as well as replenishing sand in many of the bunkers. Our plan is to replenish what was lost throughout the year in all of the green side bunkers so we can keep them consistent throughout the course. Also, with the course being dormant, the recent rains have saturated the course so we ask that you please be respectful with golf cart traffic. Way to go Brad… WCCC is proud of you!!! Walnut Creek Country Club • January February 2015 Meet Davey Thompson, our other culinary extraordinaire. Davey is currently in his second year of the Culinary Arts Program at LCC, and is the proud recipient of a scholarship to attend this great local program. Upon graduation, Davey will be an official card carrying Sous Chef. Check out the LCC website to learn more about their culinary program. Davey was born in Florida and moved to Goldsboro in 1971, when his dad PCS’d to SJAFB. He has worked in the WCCC kitchen for two years, and has played a major role in the recent improvements to member dining. Davey has been married to his wife Junko for five years, whom he met 17 years ago at the old Schooner Or Later. They are the proud parents of two chihuahuas and one cat. Davey’s parents, Dave and Rita Thompson, are members of WCCC and are very proud of what their son has contributed to the club. In his spare time Davey likes to play Frisbee golf and watch football.
