A new year always begins with a resolution, as an international
travel magazine, we resolve to promote India in a global
platform in the best possible way. We also aim to bring
together the East and the West, in creative collaborations
through stories, videos, events and special editions. The USA
special, which was released last month, was a huge success
and we are ready for another such, next month.
January is always dedicated to new beginnings and forecasts.
Our cover story features the destinations that will rule this
year. The highlight being Turkey, which is also on the cover,
beautiful shot by celebrated photographer Atul Kasbekar.
Be it food, fashion or fitness, we talk to the experts and give
you an insight on the Hows, Wheres and Whats of 2015.
Hope this year turns around into a positive and cheerful one,
after the sad killing of the cartoonist Charlie Hebdo and the
following attacks in Paris.

Hobbit costume trail for
Middle of Middle-earth

Where: Wellington
To celebrate the release of The
Hobbit: The Battle of the Five Armies
and thank the Middle of Middle-earth
for its support over the past 15 years, Sir
Peter Jackson is lending more than 20
costumes and props created by 3 foot 7
and Weta Workshop for The Middle of
Middle-earth Costume Trail where A
trail of Dwarves, Elves, a Hobbit and
a Wizard will offer Middle-earth fans
a rare opportunity to see the artistry
behind 'The Hobbit' Trilogy up close in
Wellington this summer. The trail across
15 locations will launch to coincide
with the opening of the third film in The
Hobbit. The Middle of Middle-earth
Costume Trail opened in Wellington
on 11th December, 2014 at various
locations, including Te Papa – Museum
of New Zealand, Embassy Theatre,
Roxy Cinema, Kirkcaldie and Stains
department store, Wellington i-SITE

Cape Minstrel Carnival
When: From 2nd January till the end of the month
Where: Cape Town, South Africa
The parade begins on Darling St, in front of Old City Hall, and passes through
Bo-Kaap en route to Green Point Stadium. It is Cape Town’s largest carnival that
becomes noisy, joyous and disorganised affair featuring marching troupes adorned
in practically every colour of satin, sequin and glitter. The festival is also known
as the Cape Town New Year Karnaval that dates back to the 19th century, when
slaves in the city were allowed their only day off for the year on 2 January. It is the
actual Cape Minstrel competition, when troupes are judged on a variety of criteria,
including costume, singing and dancing, running each Saturday night throughout
January and early February. If you miss the main parade, there are chances to
catch the minstrels in action on these nights at Green Point Stadium, Athlone
Stadium and Vygerkraal Stadium – it makes for a unique Capetonian experience.
Winterlude in Canada
When: January 30, 2015–February 16, 2015
Where: Ottawa
This February Ottawa is transforming itself into a
magical, winter wonderland. Winterlude is one of the
most popular events that take place in Ottawa. One can
explore the Winterlude by witnessing ice, Snowflake
Kingdom; experience the snow maze, snow obstacle
course, 30 giant snow slides and ice fishing. The
Rideau Canal Skateway is the world’s largest skating
rink where skates can be rented. Glide along in the
sites and fun-filled activities along this 7.8 kilometre
sheet of ice. At night, groove on to some great music
at the Confederation Park. Also, treat yourself with
a uniquely Canadian treat-a BeaverTail which is a
delicious, sweet pastry stretched to look like a beaver
tail or the Poutine-French fries smothered in gravy and
cheese.
Timkat (Epiphany): Ethiopia's
baptism festival
When: 18–20 January
Where: Fasilidas’ Bath, Gonder, Ethiopia
It is Ethiopia’s most colourful festival that
commemorates Jesus’ baptism in river Jordan and
is celebrated around the country, though it’s most
spectacular in the former capital of Gonder.
On the eve of Timkat, the church tabots that is
the replicas of the Ark of the Covenant are taken
to Fasilidas’ Bath. During the night, the priests and
faithful participate in a vigil around the tabots. The
following morning (19 January) the crowds gather
around the water, which is blessed then splashed onto
them, and religious vows are renewed. The tabots are
then paraded back to the church accompanied by much
singing and dancing. It’s a unique sight at the Gonder
Timkat of the faithful leaping into the baths for a full
immersion ‘baptism’.
La Tamborrada
When: 20 January
Where: Begins in Plaza de la Constitucíon, San Sebastian,
Spain, and spreads through the old city.
Can you hear the drums, Fernando? You’ll be hard pressed to
hear anything else for 24 hours in the Basque city of San Sebastian
as it stages the unusual – and unusually loud – La Tamborrada. At
the stroke of midnight a flag is raised in Plaza de la Constitucíon
and regiments of soldierly drummers begin parading through the
resort town, banging and thumping at drums and barrels to celebrate
or wake from the dead the city’s eponymous patron saint.
Throughout the day and into the next evening there’s no pause
in the drumming as up to 100 regiments of drummers take to the
streets of the ritzy resort city. Even San Sebastian’s children get
a turn, with all of the city’s schools marching and drumming in
uniform during the day. Well, if you are ready to enjoy the festival
don’t forget to get your earplugs if you want any sleep this day.

the tallest skyscraper temple

Literature Festival
The ZEE Jaipur Literature Festival is the world's largest free literary
festival, celebrating national and international writers and
encompassing a range of interests including film, music and theatre.
The festival has already hosted some of the best-known national and
international writers and is scheduled from January 21-25 this year

1. ‘Selfie: The Art of the Memoir’ with
Elizabeth Gilbert, ‘The Conflict of
Dharma in the Mahabharata’ with Amish
Tripathi and Bibek Debroy, as well as a

appear together on stage.

holiday in Germany in 2015

isiting the not so talked about
cities in Germany made me
appreciate the joys it had to
offer. These cities are attractive
and loaded with interesting
museums, architecture, culture, decadent
food, wine and beer, pulsating nightlife
topped with a spectacular countryside.
Indulgent yet inexpensive, these three
unexplored cities provided a different
experience and I not only made wonderful
friends from across the world that I will
keep for life, but memories that will also
last a life time.
Cologne
Cologne is an unprejudiced city boasting
a 2000 year old history. It may not look
as beautiful as the other cities in the first
glance, but when you walk around, you’ll
discover that it is gorgeous and grows on
you.The city is about the aura and its people.
Interestingly people here have their own
dialect and one would come across quite a
few music bands who sing about the city in
these dialects.
A pinnacle here is of course the cathedral.
I would recommend climbing the 386 steps
to the top. Post which, walk across the
railroad bridge to get the most amazing
view of Cologne. A pleasure for anyone who
has even a minimal interest in chocolate, I
visited the Chocolate Museum and enjoyed
the tour. They even make their own chocolate
in the museum and you get a free sample
with your entrance ticket. If you are not
educated on how chocolate is made, this is
a unique (and delicious!) experience. People
love socialising along the Rhine River. Just
near the edge of the Altstadt (Old City) is a
row of colourful breweries and restaurants.
Seize a table at one of them for some typical
German food and a local brew (Kölsch).
Soon as you sit down you get a Kölsch right
away without asking for it and as soon as it’s
empty, you get a refill without asking for it,
until you put your beer mat on top of your
glass. A must do in Cologne is also riding
bicycles with cycle paths being everywhere
it is fun and safe as well! You surely
can’t leave without visiting the Fragrance
Museum, as the city was home to the ‘father

by creating the iconic ‘Eau de Cologne’. The
museum showcases a collection of historic
perfume bottles and documents, amid
distinctive rococo furnishings. Worth a sniff
around! If you happen to travel in February
and March you can experience the fabulous
Carnival, otherwise I would suggest May
until September to visit Cologne. The
Christmas markets are also very special, so
November and December make a great time
too. And yes, don’t miss the Cologne’s love
lock bridge!
Mercedes Benz museum in Stuttgart

It is delightful to walk through Stuttgart’s
streets and to enjoy the alluring landscape.
Owing to its location, you can accomplish
everything within walking distance and in a
short time you can visit expansive squares,
gorgeous castles and buildings of distinct
architecture manner. However, the city
is also known for being the birthplace of
the spark plug (Bosch was founded, and is
headquartered there), so a visit to the car
museums is a must. I cannot decide which
museum is better, as both the Mercedes
Benz and Porsche are fabulous highlights
of architecture. I promise you though;
both museums are very interesting just
for the engineering value, even
if you are not a car aficionado.
Another pretty place to visit is
‘Karlshöhe’ a 343 metre high
mountain in Stuttgart’s South
West. For the most satisfying
route, you can climb up through
the vineyards, and get an

The Wine Village in Stuttgart
extraordinary view.
There are many captivating
events in the city. The Summer
Celebration with music, food,
and drinks is a great example. The Wine
Village is also favoured with the wine of
the surrounded regions on offer to sample.
But my highlight was the Christmas Market
in December with its small cabanas with
hot wine, a lot of food, crafts, Christmas
accessories and jewellery. It is world
famous and not to be missed during the
winter months. Stuttgart is also close to
a few towns and a must visit is Esslingen
which has plenty of restaurants, bars and
pubs to keep you busy with a large range
of shopping options and a pedestrian
street filled with shops. This quaint town
is famous for its festivals galore like the
strawberry and onion festival and their
famous Medieval Christmas Market!
Esslingen also has vineyards that pour over
the hills for miles upon miles boasting of an
annual Wine Walk and vineyard tours in the
warmer months.
Baden Baden (alias Baths)

Relaxing after bath in Baden Baden
cake and pretzels galore! It is the ultimate
spa town- Baden means bath in German.
People come here to spend hours in the
thermal baths, the healing waters coming
straight from the mountains and natural
springs rising from depths of around 6,500
feet. After lunch and walking around a bit I
went into the Roman bath ‘Friedrichsbad’,
the whole building looks like a Roman
temple, with elegant decorations. Out here
on certain days, the baths have separate
areas for men and women, and on some
days, both men and women bathe in the
same area and yes you don’t bathe with
your clothes on, do you? I happened to
be there on the day when both men and
women bathed together and at first I was
a little apprehensive but soon I realised
that it didn’t really matter who is around
you as no one even looks at you and trust
me it was an experience of a lifetime. The
bath has 17 different rooms, where
different baths, showers, steam
baths, and saunas are located.

Baden Baden has plenty of dining options
After the refreshing bath
I explored Baden-Baden
some more, stopping by to
take a look at the nearby Caracalla
Therme , which is a more modern bath
house with a more modern take at the
bathing experience. Walking around, I also
came across numerous beautiful mansions
lining the stream, with their own private
bridges going across. If you happen to pass
through this region, definitely check out the
numerous asparagus festivals, asparagus
peeling competitions and fun asparagusthemed events all around. 

The capital city of Kuala Lumpur or KL
as it is popularly known is the focal point
of Malaysia. Famous for the Petronas Twin
towers, the city is also home to rich cuisines,
unlimited shopping and colourful cultures.
Tourists travelling to KL can enjoy the
delicious Malaysian cuisine in a variety of
restaurants by the day and in ‘pasarmalam’
or open air markets by night. Dishes like
chicken satay, spicy fish salads and fresh
noodles of all kinds are plentiful, reasonable
and delicious and are easily available in
areas like Petaling Street, Chow kit, Bangsar
and many more. As the sun sets, the city
morphs into a dizzying hub of sky high
bars, jazz clubs and good old discos. Kuala

Located at the southern tip of Malaysia,
Johor Bahru is the second fastest growing
city in Malaysia after Kuala Lumpur. In
its new avatar this city is a lively and an
appealing place to hang out. The presence
of Singapore, just across the Straits of
Johor Causeway, is one of the reasons that
make Johor Bahru an important tourism
and commercial hub and one of the biggest
industrial centres of the country. Johor Bahru
offers a lot for the visitors right from popular
landmarks, shopping destinations to natural
attractions there’s a lot to suit every taste..
To name a few are the Danga bay, the largest
recreational park in Johor, surrounded by the
lush tropical rainforest, the Desura beach

For Indians settled in London, it’s like a home away from home. Here we bring an account of one such Indian,

moved to the United Kingdom from
India during the Christmas in 2006. For
most, that’s not the time when people
travel to London owing to its extreme
weather conditions. But your dreams
make you do everything; move mountains
too.
So, here I was in the city of London. Cold
weather, unexpected rains, long coats is how
someone had defined London to me earlier.
Arriving here during the Christmas season
has made me fall in love with the city. For a
job that involves travel, I make the most of
my time to look around the city I live in. And
winters have now become my favourite with
Christmas celebrations being the highlights.
In winter, London is spectacular even
though it’s freezing cold. It lights up

at Christmas – literally! The lights are
switched on in early November. I find this
time of the year as worth visiting the big
stores on Oxford Street and Regent Street.
Normally, I take a stroll from Marble Arch
along Oxford Street, and all the way I just
keep admiring the beautiful white orb
Christmas decorations above. The evenings
are the perfect time to see the lights in all
their glory.
I also like visiting the Trafalgar Square
during this season. If you google it up you
will find the story behind the huge Christmas
Tree at Trafalgar. It says that each year
Norway presents a huge Christmas Tree for
the country's help during the Second World
War. The tree is usually over 20 metres high
and 50-60 years old.

Another biggest magic of Christmas I have
experienced is with my bunch of friends. A
visit to Winter Wonderland; nothing beats
that. It’s a holiday fair inside Hyde Park.
Here you will find rides, a magical ice
kingdom, a bustling Christmas market and
much more.
To satiate your quest for the best view of
the city, I truly feel that there is no better
view than the one from the top of The
Shard in Central London. The Shard is an
87-storey skyscraper in London and is the
tallest building in the European Union. It has
offices, three restaurants, one hotel and view
areas too.The view areas give an enigmatic
360 degree view of the city. It gives you
views of world’s most famous landmarks
including Tower of London, Buckingham
Palace, Wembley Stadium and the London
Eye. You can also experience the highest
viewpoints of Western Europe and on clear
days the views extend to a spectacular 40
miles away.
Shopping becomes fun during this season.
London as it is known for its fashion, offers
some good street shopping too. There is more
than just Oxford Street. Market areas like
Brick Lane and Camden are good to explore.
Brick Lane market sells food and general
bric-a-brac on Sundays. While at Camden
you will find collections ranging from hip to
Goths. These shops are something to look at,
especially the walls. You will also find a lot
of Indian crowd here. I love to flock around
here on weekends with my camera.
But, no Christmas is complete without
the fun of ‘Boxing Day’ sale. Boxing Day
is generally a bank holiday in UK that falls
on the next day of Christmas. Big or small

stores, everywhere there is sale on this day.
Though I find it funny to see people queue
up outside stores since morning but it’s
worth buying some stuff in the sale. I made
some good deal on jackets and shoes last
year.
Even after spending eight years in
London, I am amazed at its incredible
multiculturalism. I like to term it as ‘world
inside London’. Coming from a Punjabi
family and with my roots in India, I love
Baisakhi melas, local concerts and music
festivals, and Bollywood night clubs all
around London.
The one thing that makes the movement
really smooth in London is its underground
tubes. London is praised for its transport.
The tubes are a part of everyday travel.
Transport for London (TfL) has a colour
guide to refer the different tube lines.
London is not just a melting pot of
languages, cultures and ethnicities. It is
also a melting pot of accents.The society
is very diverse, consisting of people from
different financial backgrounds and ethnic
origins. Some study says that more than
300 languages are spoken by the people
currently living in London.
With so many good things happening
around in my city, I welcomed another New
Year which was a treat for eyes.

The Arabian Gulf is already one of the
world’s top three cruise destinations for
winter sun and Dubai is the home port of
choice for cruise operators in the region including Costa, Aida, Royal Caribbean,
MSC and TUI – offering the largest cruise
facility in the Middle East. The main port,
Mina Rashid, is located close to the centre
of Dubai and excellent transportation links
mean that the attractions of the city are
within immediate reach of cruise passengers.
Investment in new infrastructure –
including a new state-of-the-art cruise
terminal at Mina Rashid, Dubai’s major
cruise port, which opened earlier this month
- combined with guaranteed sunshine and
warm weather, as well as must-experience
attractions such as Burj Khalifa, the Palm
Jumeirah, Burj Al Arab and world-leading
malls packed with international designer
brands, make Dubai an ideal cruise
destination – and the ideal location for an
extended stay at the start or end of a cruise.
It recently became easier and more efficient
for Indian cruise tourists to visit Dubai and
other locations in the United Arab Emirates
by sea, with the introduction of a new
multiple entry UAE visa for cruise tourists.
Indian tourists entering the country to take a
cruise who require entry into multiple UAE
ports – for example Abu Dhabi, Dubai and
Khorfakkan – can now apply for the new visa
through their cruise line, either at the time or
after booking. The visa is valid for 60 days
from the date of issue to the first entry into
UAE. After the first entry, the visa remains
valid for 30 days.
Burj Al Arab
Dubai’s cruise season, which runs from
October through to June, will see a total
of 110 cruise ship calls carrying more than
381,000 passengers arriving in the city.
Dubai Tourism forecasts further sustained
growth for the cruise sector, spurred by the
upcoming opening of an additional new
27,000m2 terminal at the city’s main port
later this season, the introduction of the
new cruise tourism visa and the work of the
Cruise Arabia partnership. Cruise Arabia is
a collaborative initiative formed by Oman’s
Ministry of Tourism, Abu Dhabi Tourism &
Culture Authority and Dubai’s Department
of Tourism and Commerce Marketing to
promote the region as a cruise destination.
Frequent cruises from Dubai start with a
minimum of four nights travel and include
seven, 12 and 14 night itineraries covering
the Arabian Gulf, India and Sri Lanka. 

The Greatest Indian Wedding
How big is big? A Sikkimese wedding that took place recently is all set to change the rules of the game

Himalayan kingdom originally
known as Sukhim that merged
with India in the early 1970s,
Sikkim is undeniably one of the
most pristine hill stations in the
nation. I choose not to go into the clichéd
though stunning rhododendron blooms,
the majestic Kanchendzonga Peak, the
thupkas oozing umami or the little pockets
of culinary delights called momos. Rather,
I would like to talk about a spectacular
wedding I witnessed very recently. In fact,
I’m sure, the memory of the opulence I came
across during the occasion will be ever fresh
in my mind for a long time to come and I am
compelled to recount my experience. Eight
years in the heart of the country, Delhi, often
placed me in the guest list of big, boisterous
and bizarre weddings. Of these, many easily
qualify, for their lavishness and scale, as Big
Fat Indian Weddings. Therefore, I’d judge
myself experienced enough to declare that
this one wedding puts all of them to shame,
considering Sikkim is a small Himalayan
state.
It was a 10 day affair that took place at
Mangan in North Sikkim - also known
as the cardamom capital of Asia and the

capital Gangtok. There were three whole
days of rituals and seven long days of
proper feasting. The bar opened its doors
each day at 11 in the morning and probably
closed in the wee hours of the next morning.
Big labels were flowing and not a single
guest was complaining. Musicians from
all over Northeast India made for the daily
entertainment. Folk singers from Nepal and
Tibet mesmerised the guests with enchanting
haunting melodies. DJ’s set the rhythm for
the nights. There was no room for boredom.
The guests and hosts, all dressed in their
silken traditional best called ‘Bakkhu’, added
not just colour to the festivities but also gave
you the feeling that you’ve travelled back in
time. The scene that met my eyes everyday
could have been picked right out of the sets
of the movie “The Forbidden Kingdom”.
Aside the modern brew and continental
gourmet affair, the traditional aspect of
Sikkimese culture was presented with beauty
and finesse.
‘Chang’ the traditional millet wine was
served in traditional copper and silver mugs;
the servers never forgetting the occasional
re-fill of warm water to re-activate the brew.

accompanied by traditional beef sausages,
local pork sausages with bits of fats in them
and my favourite sautéed offal’s of mountain
goats for snacks. Their aroma lingers in mind
even now as if someone just walked by with
a platter full. I type this while I helplessly
salivate.
I would deem myself lucky to have had
the opportunity to sample them, in a time
when ancient cultures are rapidly morphing
as modernity overtakes tradition and culture.
The wedding put the Sikkimese culture

than becoming an ugly display of wealth.
The groom’s father, T T Dorjee, ex chief
secretary of Sikkim, intended the wedding
to be elaborate and authentic. He wanted
it to be a tribute to Sikkimese culture and
tradition and a wedding to remember; a
wedding that will remind people of their
legacy and encourage the youth to preserve
their practices and rich heritage.
It is not enough to mention that the
food was delicious. The magic ingredient
that transformed the fare to soul enriching
food adding to the gusto of the festivities
was the humility and the sense of respect
that the hosts had for each other and the
guests. It was a sight very rarely seen when
everyone involved in the wedding took full
part in making the guests welcome and
exceptionally comfortable. The group of the
groom’s friends assigned to welcome guests
and usher them performed their bit for all 10
days of celebration. Guests were never left
unattended. Even the thirty five odd buffets
in the dining hall, excluding the snacks
bar, were manned by family members who
made sure that the guests ate and ate well.
The 5,000 guests teeming the family home
were fed what might have been enough for
the whole of Gangtok. A total of 25 suckling
pigs adorned the dinner table through the
feasting. The locals were sure happy. Most
of the cheese as good as fresh feta or ricotta
cheese and mozzarella made of yak milk
were sourced locally. There were cheese
momos, homemade sausages and freshly

farmed vegetables.
Even tea drinking was never a simple
affair. The cuppa was always served in
traditional Chinese tea cups with lids placed
on tiny saucers served with a helping of
salt, sugar, warm water and three different
spoons. It was a wonder how these details
were remembered with 5,000 people looking
for their morning tea – each day for ten days.
Cleanliness and presentation were of prime
importance. With standards never being
compromised, the organisers deserve a pat
on their back. The Sikkimese hospitality did
not disappear with the closing of festivities
but followed me till I boarded my flight from
Bagdogra airport. 

so perfect. Be it witnessing a
glorifying sun rise, a lone walk,
chirpy talk, engaging with the
locals or getting lost in the
middle of nowhere -perfect moments can
definitely have their share of abundance,
only if you are ready to experience.
As I sat with my friend to hear the tales of
this gem of a place, it did hold my breath for
the simple reason of being unfamiliar among
the Indian travellers. As he was describing
the beauty in words, it was easy to make
out that the place must have some sparkles
attached and hence I decided to pay a visit to
Kanatal. And to be honest, the place did hold
up to my expectations.
Known for its mesmerising beauty, scenic
views, verdant forests, invigorating winds
and tranquil weather, Kanatal is a perfect
getaway for people who want a good and
quick break from work. Located 78 km from
Dehra Dun and 38 km from the Queen of
Hills- Mussoorie and 12 km from Chamba,
Kanatal is a hamlet built around numerous
hills, a locale which personifies the romantic

aura of Tehri District, Uttarakhand, which is
located on the Chamba-Mussoorie highway.
History goes around that Kanatal gained its
name from the now dried lake with the same
name. The town is serene, unpolluted and
away from the hustle bustle of city life. The
temperature during summers varies from 10
to 20 degree Celsius. The month of winters
turn this beauty into a mesmerising white
ground as Kanatal is blessed with snowfall
during the months of December to February.
For the wandering travellers Kanatal will
be a great gift of silence. A walk amidst
Deodar trees will not only provide a sense of
happiness but also calmness to the mind and
soul.
In Kanatal the most elevated point is
Surkunda Devi Temple. The holy shrine is at
an altitude of 9,995 feet above the sea level
and is considered as a very sacred temple in
Kanatal, dedicated to Goddess Sati. History
has it that Kanatal is the place where God
Shiva brought her dead body on his trishul
from Haridwar.
The place has an extraordinary impact
with a magnificent mountain view. On the
whole, Kanatal is an ideal place for people
to spend some memorable and peaceful time
in solitude, away from the noise of modern
cities.

A culinary journey
through Kerala
Gently swaying palms, gleaming white pristine beaches, endless captivating stretches of meandering
backwaters and lots of happy friendly folks add to this the curries and the appams and just enjoy

he list is infinite when it comes
to describing Kerala’s myriad
charms. Known as ‘God’s own
country’, the destination is an
indescribably beautiful place
and is best explored during the months of
November to March.
Cochin is one of the finest tourism spot;
a small beach and historically important
place to spend your evening. One of the
added beauty of this place is the standing
tall fishing structures -- the Chinese Fishing
Nets.
Like countless other travellers, I feel that
the biggest highlight of a Kerala trip is to
cruise the backwaters on a houseboat and
munch on the traditional food.
Kerala was influenced by Arab traders,
French rulers and the native Zamorins
and Namboodiris. So there is a good mix
of Muslims, Christians and Hindus, all
contributing to the wonderful diversity of
the food in their own unique way.
The fiery curries of the locals were
adapted to the foreign tastes resulting
in Kerala cuisine. The major influence
was from the Arabs who stayed over and
established their religion along with the
cuisine in the state. As a result, vegetables,
fish, meat and chicken were all cooked in
milder spices and coconut gravies to form
the local Kerala cuisine. Almost all Kerala
food used large quantities of coconut, milder
spices, lesser ghee and oil in the dishes. The
Arab influence is prominent in the cuisine of
the region.
Kerala is blessed with backwaters,
lagoons, rivers, lakes and has plentiful
supply of a variety of fish. Pomfrets, crabs,
mussels, clams abound in the sea; a range of
fresh water fish such as the prized karimeen

(pearl spot) is also found in Kerala.
Though coconut oil is the preferred
cooking medium for most seafood dishes in
Kerala, any other cooking oil can be used,
with teaspoon of coconut oil drizzled in for
that distinctive flavour of south India.
The verdant paddy fields across Kerala
bear witness to the importance of rice in
the malyali diet; it is the state’s staple food.
In Kerala parboiled unpolished matta rice
with nutritious husk is preferred over the
polished white rice popular else where in
India. Matta rice is boiled, dried, and then
husked, retaining much of the bran, which
gives flavoursome rice its characteristic
reddish hue.
Roasted rice flour is steamed in large,
hollow bamboo stem for puttu. This type of
rice flour is even used in making Appams.

Food is cooked in giant urlis and
served on a banana leaf. Here are a few
interesting protocols that I found out
after eating a lot of sadya. The banana
leaf is placed so that its narrow part
always points to the left side. Sadya is
served from the top left corner of the
leaf, on which is placed in order, a small
yellow banana, sarkara upperi (shakkar
paras) and papad. Then the mango
pickle, injipuli (a thick ginger tamarind
curry), lime pickle, and the thoran,
olan, avial, pachadi, kichadi, Erissery
(a pumpkin chori bean combination like
no other) and salt are placed in order.
This Onasadya was special for two
things that I learnt. One — payasam and
crushed papad (Apallam) is an amazing
combination because it gives you the
sweet and salty balance that is so ‘in’
(and it soaks up the milk so that you can
eat payasam with your fingers just like
the pros) and two -- Palada is the best
dessert ever.
Another must visit when you are
in Kerala is a local toddy shop. Most
toddy shops are licensed to sell the sour
country brew that is freshly tapped each
morning from coconut palms all over
Kerala. It serves almost all the dishes
from humbling Kappa to Quail.
The experience is all the merrier if
you are on a romantic outing. In fact,
everything about Kerala spells pure bliss.
Be it simply gorging on scrumptious
South Indian cuisines or drinking in
the natural wonders of game filled lush
forests, huge tranquil rice paddies, or
the softly rolling green hills – Kerala
slowly grows upon the senses and finally
enraptures one completely.

there is 0.7 per cent of global tourism which
comes to India hence the scope is immense
and there is the evolving mid market segment

TLF: With so many international

market what’s your take on competition
and how does StayWell Group fit in the
picture?
Competition is always healthy and is a sign of
maturing market. India and China have a lot
of competition and the only way to survive
is to run fast. The company is a close knit
organisation and is motivated to grow. The
key differentiating factor is that we never
over promise rather under promise and over
deliver which makes the client very happy
and he returns to us for more business.

Excursions around town
There are quite a few excursions from the
Ramgarh Lodge but a visit to Bhangarh or
the Haunted Town is a must. Known for
its historical ruins Bhangarh is a beautiful
and a tranquil town, but nobody dares to
go there after dark because of the so called
ghost sightings, however it is worth a visit.
The excursion will take about 4 hours from
the lodge. 

their property in Mussoorie - Royal Orchid

Café Mezzuna, Kolkata
My bliss lies in the first bite of a
‘Norwegian Smoked Salmon Crepe’ and
at the bottom of a freshly brewed cup of
coffee, and sometimes in that decadent
‘Pumpkin and Goat Cheese Ravioli with
walnuts’, the thin crust pizzas, freshly
baked breads, simmering succulent meats
or the last bite of a mouth melting ‘Vanilla
Bean Panacotta with Fresh Berries and
Biscotti’ and I found it all in a cosy corner
of Café Mezzuna. The food menu is
designed to be a bonafide dining out option
when one is looking for a great time out
with friends. Indeed Kolkata gets its casual
groove with a pinch of spunk with this new
space. Designed by Menoo Chatterjee, the
experience at the cafe is a combination of
subtle colours and a cosy relaxed décor
especially around the bar.

Sophisticated and generously spaced
with clean lines that stunningly blend glass,
iron and concrete creating a place that is
industrial yet sleek. On offer is ‘inspired
cuisine’ which amalgamates international

Johnny Rockets, Delhi
Johnny Rockets is a very happy and
lively place that connects with people of all
ages. The highlights of the menu include
legendary shakes – these are hand dipped
and hand spun, made with the special
natural vanilla ice-cream (they procure
their vanilla beans from a small farmer in
Kerala), whole milk, quality ingredients and
real whipped cream. The burgers there are
lip smacking and the 150 gm burger patty
is made with 100 per cent fresh, all-natural
prime ingredients, seasoned and made to
order, served on regular/ potato or wholewheat bun with either fries or a side salad.
My favourite burger on the menu is Route
66, it’s a meat patty with emmenthal cheese
and grilled mushrooms which leaves me
drooling for more!

At Farzi Cafe the pursuit for perfection is

bistro concept. I was reeling as the flavours

appealing the ‘Bombay Bhel Version 2.0’
aka freeze dried Bhel Puri is a triumph of
textures and distinct flavours. In fact all
starters, are unusual, but the Farzi ‘Mishti
Doi’ is one of my favourites, delicate and
wobbly and they popped like balloons in my
mouth to reveal a juicy centre which was
intense and tasty. Mains don’t disappoint
either. For desserts molecular goodness
comes in the form of phirni oxide and I was
surprised with its balance of presentation
and taste.

ocated 4km away from the
Chikalthana airport in Aurangabad
the Lemon tree hotel has much to
offer! Greeted by smiling faces and
a whiff of their signature lemon
fragrance the hotel boasts a magnificent
swimming pool with lush green landscapes
and outdoor setting. I was greeted by the
quiet, humble Chef Sambhav, the executive
chef of the property who guided me to the
Citrus Café. The ambience was calm and
laid back with bamboo chairs and a youthful
energetic atmosphere. The restaurant serves
North Indian, Chinese and Italian cuisine
but my culinary sojourn was limited to the
58 TLF Magazine  January 2015
cuisine of Maharashtra.
Local Flavours
First on the menu was the sweet and
tangy ginger kokum sherbet with an
earthy feel to it. Made from the kokum
fruit blended with cumin, ginger and
coriander poured in a glass lined with salt;
the kokum sherbet was an enticing start
to the meal. The sherbet was followed by
the traditional Maharashtrian koshambir
salad, which consisted of juicy tomatoes
complemented with crisp carrots and
fresh curd yielding a flawless dish with

a crunchy feel and refreshing touch to it.
Next on the menu was the ‘Hurdaa Bhajji’
which are fritters made with tender ‘jowar’
a Maharashtrian staple, which is mostly
consumed in the months of December to
January when it is most tender and juicy! As
soon as I dug in to these small robust delights
I could feel the crisp exterior followed by a
juicy and tender interior providing a burst
of spicy and earthy flavors. Along came the
Maharashtrian papad, which on the first bite
yielded a sense of reminiscence to the days
in which my grandmother would prepare
them. We were served a selection of assorted
accompaniments including the ‘thecha’ a
chutney prepared by pounding garlic, green
chili and groundnuts which provided the
much-required ‘hot’ and ‘fierce’ addition
to the menu. The thecha was an example of
perfectly engineered flavours where not one
ingredient overpowered the other, indeed
a true culinary delight. Finally, it was
time for the main course which included
the ‘chicken Maratha’ (a dish cooked in
authentic Maharashtrian spices), the ‘Bharli
Wangi’ (eggplant stuffed with spiced
sesame seeds and peanut powder) and the
‘Jowar and Bajra Bhakri’ (flatbreads made
from white and pearl millet) The
appearance of the chicken was bold
with an aromatic fragrance but
Citrus Cafe
lacked a wee bit in spice which
is found in most Maharashtrian
preparations, perhaps as they also
cater to some foreign clientele. The
‘Bharli Wangi’ (read stuffed aubergine)
which is one of my least favorite dishes
was surprisingly piquant with a distinctive
taste. The ‘Masala Bhath’ a spiced veggie
rice preparation followed these dishes
along with a spiced lentil preparation called
‘Amti’. The tangy sweet lentil preparation
married the rice brilliantly.
A Sweet Ending
Dhanesh P. Gandhi is a 3rd year culinary
arts student of IHM Aurangabad. He won
the review writing competition held by
TLF’s food columnist, Rupali Dean in a 3-day
Food Writing Workshop at the institute.
Lastly the much awaited dessert, which
was the ‘Pooran poli’ (Flatbread stuffed with
sweetened lentils) with sweet milk arrived.
The dollop of ‘ghee’ gradually melting over
the pooran poli was a tantalising sight. The
ethereal sweet bread with ghee dipped in
sweetened milk was truly the highlight of
the meal. All in all the experience at Citrus
Café was a remarkable and wonderful
experience without any nouveau pretension.
The warmth and alertness of the food service
personnel was gratifying and enhanced
the dining experience. For those in search
for authentic local flavours in Aurangabad,
Citrus Café is a must visit. 

Pomegranates: Chances are you’ve tasted
pomegranates in their newly popular juice
form. And from a heart-health perspective,
that’s probably a good thing. Pomegranate
juice is rich in antioxidants (more so than
other fruit juices)—just a cup daily might
help to keep free radicals from oxidising
‘bad’ LDL cholesterol.
Dark Leafy Greens: Dark leafy greens,
such as kale, chard and collards, thrive in the
chill of winter when the rest of the produce
section looks bleak. In fact, a frost can take
away the bitterness of kale. These greens
are particularly rich in vitamins A, C and K.
Collards, mustard greens and escarole are
also excellent sources of folate, important
for women of childbearing age.
Citrus: Citrus fruits, including lemons,
limes, oranges and grapefruit, are at their
juiciest in the wintertime and can add sunshine to the dreary winter. Citrus fruits are
loaded with vitamin C—one medium orange
delivers more than 100 percent of your daily
dose.
Potatoes: They are an excellent source of
two immunity boosters—vitamins C and
B6, delivering 25% and 29% of your daily
needs per medium potato, respectively. They
are also a good source of folate, which is especially important for women of childbearing age and they deliver fibre (4 grams in a
medium potato; women need 25 grams daily

like a charm! Punch rapidly for 30 seconds,

in the Kingfisher Calendar, in a chat with Nidhi Joshi, assistant editor, TLF magazine sheds some light on his
work, travels and food preferences

tul’s career graph seems to be
straight out of the Hindi movie
‘3 Idiots’ (remember Farhan/
Madhavan's track in the movie;
only difference, he decided to
walk the path much before the movie was
made). Besides having shot many famous
faces of Bollywood today, he runs Bling,
a celebrity management company and is
working on two movie projects.
TLF: You were studying chemical
engineering, how did photography
happen?
There were no women in chemical
engineering; it was very depressing (laughs).

I was not enjoying studying chemical
engineering; my heart was not in it so I
decided to make my hobby my profession.
Today I am very happy that I took that step
and when my school friends look at me they
appreciate my decision (read jealous).
TLF: How does it feel to shoot pretty
and new faces every year? Does your
camera differentiate between faces?
When I got the brief from Dr. Mallya
about the Calendar he only said one
thing that nobody should be embarrassed
to receive a copy. And I think we have
succeeded greatly in fulfilling that brief.

 South Africa especially Cape Town is
fantastic . We shot twice in South Africa. I
really could live there.
 The South of France was also very
beautiful.
Mauritius because of its unmatched
quality of light.
 One more to the list, Australia was also
superb, especially Kangaroo Island.
TLF: How do you decide on the
location for shooting?
We are approached by various tourism
boards and then we take our pick. The
Kingfisher Calendar exposure is fantastic
exposure for the destination. (Tourism boards
are you listening?)
TLF: What’s your take on travel?
I love it. However, I am now a spoilt
traveller and I think I am past the backpacking
and roughing it bit now, although it once had
its romance. I've wonderful clients that spoil
me rotten and I love it.
Recently, I did an assignment with Swiss
Tours where I could shoot what I wanted
at their top end ski resorts. So apart from
Gstaad and St. Moritz I shot at most others. It
was an outstanding experience. I also did an
assignment in Australia with Tourism Victoria,
shooting in Melbourne the experience was
similar.

trust me you don't part with it.
Equipment eventually is only a means
to an end, a camera therefore is just a tool,
how the person behind the lens handles it
makes all the difference. I sincerely believe
that no typewriter wrote a novel by itself.
Eventually, it’s your personal point of view
that comes to fore when you click the shutter,
which is unique and mine sees women as
objects of exquisite beauty. My Nikons are
an extension of me; their sole purpose is to
deliver my vision and make each face as
beautiful as it can possibly look.
TLF: Who all (models) have been
associated with the Calendar in
the past and now are big names in
Bollywood?
From the first edition in 2003, the list has
been long and distinguished like Deepika
Padukone, Katrina Kaif, Yana Gupta, Tina
Desai, Nargis Fakhri, Ujwala Raut, Sonali
Raut, Esha Gupta and Angela Jonsson to
name a few.
TLF: What’s your favourite cuisine and
why?
I absolutely love Thai food. It just seems
like a happy mix of Indian and Chinese. I'm
massively partial to good sushi and am always
on the lookout for a better biryani. Besides
that, unless I'm comatose I would always
accept an invitation to a Parsee Bhonu. 
TLF: How important is the location
for the shoot and how was Turkey as
this year’s location?
Turkey was truly fantastic. I loved it. The
Calendar imagery across print and video is
about its baseline that refers to the 'Good
Times'. That really gets defined by moments
between beautiful people, the place,
locations, great hotels, fine cuisine, and
the romance of travel. Turkey gave us vast
options in backdrops; from the beaches and
hotels in Bodrum to the springs and Roman
ruins of Pamukkale, to the almost Martian
landscape of Cappadocia. It was a buffet of
amazing choices for a photographer.
TLF: Can you list the top three places
that you liked as a location for the
shoot and why?

CII Tourism Fest: A great crowd puller
CII Tourism Fest which was recently organised in Chandigarh saw an overwhelming response from the tourism
partners
T
he 2nd edition of 3 day CII Tourism Fest, organised by
Confederation of Indian Industry (CII), partnered by Ministry
of Tourism, India with Chandigarh as the host city, Punjab as
the principal partner state, in addition to the participation of
Goa, Karnataka, Madhya Pradesh, Maharashtra, Himachal Pradesh,
Chhattisgarh and 5 countries viz Abu Dhabi, China, Japan, Mauritius
and Thailand concluded with an overwhelming response at Parade
Ground in sector 17, Chandigarh. Huge crowds poured in on the last
day of CII Tourism Fest and it was overall an exemplary show with
around 60 exhibitors. There was huge international participation as
well. Receiving participation from 5 countries many B2B meetings
and tie ups were forged between counterparts from India and abroad.
The fest was such a hit that 83 per cent of the exhibitors said that
they will undoubtedly exhibit at the next edition with a reflection of
strong exhibitor satisfaction. All the pavilions of the fest attracted
great number of holiday lovers who benefitted from a wide range of
special itineraries, special offers and attractive packages, unexplored
destinations and great holiday deals from various state and countries’
tourism boards. Not only that the CII Tourism Fest also witnessed
the nomination of Chandigarh as the UNESCO World Heritage site.

of Tourism supports, promotes and develops the Indian travel and
tourism industry by identifying and rewarding excellence, and
inspiring its practitioners to continuously raise the standards of

This glorious award function was attended by distinguished
personalities who came together to acknowledge the contribution
of the best in the travel and tourism industry by recognising and
awarding them. The awards were presented to achievers from
different segments of the industry which included travel agents, tour
operators, hotels, airlines, state and international tourism boards. The
winners of the awards were defined by a fair and unbiased selection
process done through online voting and judged by a panel of jury

For the sake of Taj Mahal
Environmental pollution occurring due to the
industry and automobiles has been the main reason
in progressively destroying the Taj Mahal's white
marble surface. Thus, to prevent the yellowing of the
Taj Mahal, the Agra district administration ordered
almost 4,000 diesel-run mini pick-up trucks operating
in the city to convert to CNG by July this year. It has also
banned the burning of cow dung cakes within city limits.
Further, the Agra Municipal Corporation has been instructed
to impose a fine of INR 500 on those found burning garbage
in the open. The order comes shortly after a study conducted
by IIT Kanpur in collaboration with two American
universities, the Georgia Institute of Technology, and the
University of Wisconsin, revealed that carbon particles
from diesel vehicles along with burning biomass were
causing the Taj, famous for its pristine white
marble, to slowly turn yellow.
Tourism ministry soon to have
a new address
Ministry of Tourism operating from the
Transport Bhawan, New Delhi is soon to
set its headquarters at Mandir Marg, New
Delhi. The ministry has roped in New Delhi
Municipal Council to construct an office-cumcommercial complex—to be called Paryatan
Bhavan—near Birla Mandir, spread over an
area of nine acres. This plan also includes
constructing a four-storey building with two or
three basement floors for parking.
The concept and plans for this project are ready and
approved. While recently, the civic agency called for an expression of interest
from consultants. "We will first appoint a consultant and then work out the
revenue sharing with the ministry. The ministry has asked for space on two floors,"
Jalaj Shrivastava, chairperson, NDMC, said.
