BUTTERNUT SQUASH /
WILD RICE SOUP
WITH SMOKED OR
ANDOUILLE SAUSAGE

Ingredients
1 med butternut squash - 1 1/2 - 2 lbs
2 TBL olive oil
Fresh ground black pepper to taste
12 cups chicken stock - (8) 12 oz cans
2 1/2 cups chopped onions
1 cup wild rice or flavored rice
3/4 lb. Smoked/Andouille or Chorizo
2 cups fresh or frozen corn kernels
1 1/2 cups half & half
1 TBL chopped fresh parsley leaves
Salt to taste

Directions
Preheat oven to 400 degrees. Cut squash in
1/2 lengthwise. Season the squash with 1 TBL
olive oil, salt and pepper. Place on baking
sheet and bake for 1 hour. Remove and allow
to cool completely.
Peel and seed the squash. In a blender, puree
the squash with 2 cups of chicken stock.
Puree until smooth and set aside.
In a sauce pan, over medium heat, bring 4
cups of the stock and 1/2 cup of the chopped
onion to a simmer. Stir in the rice and cook
until rice is tender and most of the liquid is
absorbed. Stir occasionally. After cooking for
about 1 hour, remove rice from heat and allow
to cool.
In a large stockpot or Dutch oven, heat the
other TBL olive oil, add sausage and cook
till done. (Smoke sausage about 3 minutes)
Andouille or chorizo must be cooked
thoroughly. Add the remaining 2 cups of
onion and corn and sauté for 3minutes.
Add the remaining 6 cups of chicken stock
and squash puree and bring to a boil.
Reduce heat to medium low, and simmer
covered for 20 minutes. Skim off any fat that
rises to the surface.
Stir in cooked rice and simmer covered for
another 10 minutes.
Remove from heat, stir in the half & half.
Season to taste with salt and pepper, stir in
the copped parsley and serve.
