Around the Club…
News & Updates from CEO/GM Karen Grannemann, CCM
On February 2, we launch our winter menus in Mingle & Mixx, featuring a whole
new array of delicious appetizers, salads, soups, entrées, sandwiches, and desserts
for your enjoyment. The process we undergo three times each year to make this
happen is impressive…one I think you might be interested in knowing!

Reservations & General Info........................353-5111
Work on a new menu begins months in advance. In fact, as we roll out this new
menu on February 2, the chefs are already thinking about the next cycle—
Grannemann
creating new items and introducing some of them as daily specials for feedback.
As a staff, we review sales figures and comments from the servers (representing the feedback they
have received from you) to determine what stays and what goes. The chefs’ proposals are then
analyzed for variety; options for gluten-free, vegetarian and vegan; seasonal appeal; and many
other factors.

• Karen Grannemann, CEO & General Manager
• John Fischette, Chief Engineer
The next phase is the most unique. Several weeks before a new menu launches, we conduct a
menu training session. We prepare every new dish from every menu, and our chefs introduce
these items to the entire à la carte staff (about 20 people). During the presentation, they describe
the ingredients, the preparation, how things can be tailored to individual preferences, and much
more. The servers are given a study guide, and are invited to ask questions, take notes, and taste
every dish. The final step is a menu test, which every server must successfully complete with a
passing score.

Hours of research, preparation, cooking, class participation, studying, testing, grading, and
follow-up go into the proper implementation of every new menu. We make this sizable
investment so your server can answer questions and assist you with your selections; so you aren’t
told, “I don’t know, I’ve never tried it.”
