In fact, as we roll out this new menu on February 2, the chefs are already thinking about the next cycle— Grannemann creating new items and introducing some of them as daily specials for feedback. As a staff, we review sales figures and comments from the servers (representing the feedback they have received from you) to determine what stays and what goes. The chefs’ proposals are then analyzed for variety; options for gluten-free, vegetarian and vegan; seasonal appeal; and many other factors. Several weeks before a new menu launches, we conduct a menu training session. We prepare every new dish from every menu, and our chefs introduce these items to the entire à la carte staff (about 20 people). During the presentation, they describe the ingredients, the preparation, how things can be tailored to individual preferences, and much more. The servers are given a study guide, and are invited to ask questions, take notes, and taste every dish. The final step is a menu test, which every server must successfully complete with a passing score. Congratulations to the Biggest U-sers The Fitness Center just wrapped up its first Biggest U-ser Competition. The competition challenged members to use the Fitness Center, Spa, and Childcare as much as possible during October, November, and December. Twenty-nine members participated and logged a total of 778 visits. Our top three winners logged a total of 210 visits -- that's an average of 23 visits each month!
