Coffee came to Europe in the mid 1600s and today, coffee is the world’s largest commodity, second only to oil. Nowadays, it’s no longer just a simple cup of coffee that’s on offer to tempt you. Espresso, caffe latte, cappuccino, caffe romano… everywhere, more and more cafés are appearing to provide space for people to meet up for a break. NO. 1 IN SCANDINAVIA – AND NOT BY PURE CHANCE Today, Zinzino is the absolute leader in the “home café” concept. Our popularity and spread throughout Scandinavia is increasing constantly. The reason for this is quite simply that it has never been so easy to succeed in making a really tasty espresso, cappuccino or caffe latte! Easy-to-maintain machines but primarily choice fantastic, coffee packaged in pods are the foundations behind our smart concept. ROMBOUTS & MALONGO – Europe’s most exclusive roasting house Our coffee supplier is the Rombouts coffee house that was founded in Antwerpen, Belgium, in 1896. Malongo is its sister company in Nice, France. The company is still family-owned and is proud of its traditions and its passion for coffee. Its vision is to supply the highest quality coffee by carefully selecting suppliers at small plantations - preferably Fairtrade with unique flavours. Hand-picked beans that are processed using the wet method are bought on site where each sack is inspected to then be slow-roasted and packaged. This is what has made them the supplier of the Belgian royal family and prestigious hotels and airports worldwide such as Paris, New York, Tokyo and Dubai. 3 ” We use only the best Arabica bean in our coffee” ” The wet method gives us unbelievable quality” ” We’re happy to pay more to get the best sack” DIFFERENCES BETWEEN COFFEES - a bit about coffee Different beans, different coffee Coffee is made principally from 2 different beans, Arabica and Robusta. The Arabica bean is the finest bean which gives a mild, flavoursome coffee. Arabica grows at high altitude in the tropics. 100% Arabica is the choice for our different roasts and flavours. The Robusta bean on the other hand gives a stronger coffee with a rough, slightly bitterer flavour and is blended into only the strongest espresso flavours. If the berries are taken while they are still green they produce bitter coffee, and if they are picked too late they produce a strong, unpleasantsmelling coffee. Machines that rake off all berries irrespective of ripeness are efficient but give a primarily cheap quality. Hand-picking means that you take only the berries being ripe that day and return the following days for the others. ” Arabica differs in taste depending on its country of origin Just as with fruit (e.g. apples), the flavour of coffee beans differs depending on which country they come from but also where in the country they have been cultivated. Important factors include soil, the ratio between rain and sun, whether cultivations are on the plains or up in the mountains. The plantations that are high up in the mountains often have really good conditions for a better flavour and quality. Mechanically or hand-picked beans? One branch with coffee berries has several different ripeness phases at the same time. The berries are ready to be picked 8-9 months after flowering and the perfect time for harvest can be over in just a few weeks, so things happen quickly. 4 We hand pick only ripe berries for the sake of the flavour” Removing the coffee beans from the berries The wet or the dry method Difference in quality and therefore grading Like everything else, the coffee beans are checked, assessed and graded according to several criteria such as country, region, plantation, flavour, size, wet/dry method, impurities, etc. and can then be priced accordingly. Where the major multinational companies are concerned, large volumes and price are obviously crucial, while smaller roasting houses are looking for unique beans and are happy to pay more just to get beans of an unbelievable flavour and quality and the same uniformity in the sacks time after time. When the berries have been harvested, the beans have to be removed. The wet method requires a uniform harvest of only ripe berries that are sunk in water and allowed to ferment and so the beans can then easily be separated out. Poor berries are sorted out automatically over several stages. This is a slow and expensive method but it means that the beans have a uniform quality and fantastic flavour. The dry method is quite simply to scatter all the berries on the ground and allow the sun to dry them out over the space of a few weeks to then use machines to crush the hull until the bean comes out. The dry method includes all the berries and they are not sorted to the same extent. The dry method is used primarily by those who pick mechanically since this is an inexpensive method. 5 ” Only the red berries will be picked to obtain tasty coffee” Rombouts buys only the highest quality beans that are inspected on site. Each sack is checked once more when delivered to the roasting house. ” The aroma of freshly-ground coffee is really smooth” ROAST TO BRING OUT THE FLAVOURS - and preserve them Difference between roasting for 20 minutes or 90 seconds Juice comes in 3 flavours, wine comes in 400, but coffee comes in 900! The taste and flavours of coffee develop while roasting at different temperatures and after different periods of time. The slow roasting process takes up to 20 minutes at 230 degrees C. The beans caramelise during the first ten minutes and the aroma develops during the next ten minutes. Not until heat reaches 200-230 degrees C. is coffee transformed into brown beans that are almost twice the size they were when picked. Slow roasting requires the precision of a Roasting house expert with years of experience. Roasting takes place in small units that can roast up to 720 kg per hour, and this produces wonderful flavour variations. Fast roasting is on the other hand used by big roasting houses and is a simplified and inexpensive method that heats large ovens to 800 degrees and the beans are roasted only in 90 seconds. Using this method, more than 4 tonnes per hour can be produced. Efficiency is more important to big roasting houses than the flavours. Preserve the aroma! Half of a freshly-ground coffee’s aroma has disappeared after just 30 minutes! Everyone knows that coffee needs to be stored in a dark place in an airtight container to preserve its flavour and aroma, but even regularly-used packaged coffee deteriorates quickly. The solution is for freshly-roasted beans to be ground and then be packaged directly into portions in a closed system and sealed in vacuum packaging, known as a pod. The freshly-ground coffee’s aroma is therefore fully preserved until you open each pod and brew your coffee. Using Pods therefore gives you freshly-ground coffee every time! Good for the environment! There are different types of pods. Rombouts chooses those that are best for both the environment and the flavour! The coffee lies in a two-sided filter made of natural paper. No bleaching or adhesive has been used. The plastic pod packaging guarantees primarily the aroma but is easy to sort out to recycle and it does not have a negative impact on the environment when combusted. 6 FLAVOUR & AROMA – a bit of information on taste Taste is what we recognise in our mouths, i.e. sweet, salt, acidity and bitterness. Acidity is a dry feeling at the back and the sides of the mouth. Acidity contributes to a lively and distinct flavour experience. Bitterness is recognised at the very back of the tongue and contributes to a complete flavour experience but should not take over the flavour. The roasting increases the bitterness and also the caffeine content of the coffee. Body is the way the coffee feels in the mouth, full like milk or more like water. Aroma is what we recognise up in the roof of our mouth and in our nose and means that we recognise the flavour of things such as fruit, nuts, flowers, trees, spice, caramel, chocolate or cinnamon. The flavourings are volatile and the way in which the ground coffee is stored is therefore important. Strength is the general perception of a coffee based on several different characteristics. Rombouts coffee is graded from 4 to 10 in strength where 10 means really strong like Italian Ristretto. Aftertaste is the flavours that remain in your mouth after you have swallowed but also depending on the way you have swallowed, i.e. short or long flavour, oily or dry. 7 FAIRTRADE - for the sake of flavour There is great worldwide pressure on the price of coffee and the smaller farmers are hit hardest since their products have to compete with large mechanical plantations where quantity and price are much more important than quality and flavour. Many small plantations are affected in that they are forced to charge very low prices in order to sell, or just simply to cease cultivating coffee. There is evidently a risk that unique flavours will disappear for ever. The alternative is called Fairtrade When you buy a Fairtrade product, you can be sure that the workers who have produced the product earn reasonable wages and have acceptable working conditions since we pay a guaranteed minimum price for the coffee, which protects them against the price changes on the world market. They receive a guaranteed high price because the Fairtrade plantations are small cultivations that can compete with quality and flavour. As well as a good price, both Zinzino and Rombouts & Malongo pay central Fairtrade royalties on the coffee so they can help the cooperative with everything from the financing of harvest expenses to financing schools and healthcare. Fairtrade thus enables the farmers to continue producing small volumes and we all get to enjoy the best coffee flavours. Fairtrade certification means it is ecologically cultivated! The Fairtrade organisation for coffee, also known as Max Havelaar, has a strict environmental philosophy against all use of chemical pesticides or fertilisers and against cultivation techniques that are not good for the soil. The environmental work applies to both the coffee cooperative and each individual farmer. Organically cultivated coffee! Fairtrade requirements are actually so strict that 78 % of all Fairtrade-certified coffee also passes the requirements for Certified Organic Farming in accordance with the OTA rules (2006). The farmers who have joined the Fairtrade already have small plantations that use no machines or chemicals. But equally strict environmental requirements apply to them and they have to comply with the environmental philosophy and in the future only farm in an ecologically correct way. There are also rules stating a maximum area that one farmer can handle and a maximum quantity of coffee that may be produced there. The cooperative’s members must also participate in an ecological programme called “integrated organic and ecological development”. The programme means, for example, that overripe coffee berries are used to put nutrition back into the soil and that the coffee trees must be planted in the shadow of palms, which makes them extra resistant to disease so that chemicals are not needed. Ecological production – in all respects Rombouts & Malongo have a completely unique position as the only coffee roasting house in Europe with a comprehensive ecological philosophy. Ecologically farmed coffee is one thing, but many roasting houses forget that both the harvesting and transportation of beans must also be ecological. Finally, the actual roasting and packaging of the ground coffee must be environmentally correct. An Ecological factory The factory in Nice is ISO14001 Environmental certified and Malongo has around 15 different environmental programmes that apply to everything in its company. From the office, the roasting house, electricity and recycling but also the use of shipping and rail transport for its products. The roasting house has a green environmental certificate and has received several official nominations for its environmental work. 8 Environmentally correct pods Rombouts is the only company that has a completely environmentally-friendly pod. The roasted coffee is placed on an unbleached, natural paper filter and held together with an unbleached cardboard ring. No adhesive or chemicals are used at all to keep a coffee pod together and a used pod can therefore be composted with normal household waste without any risk whatsoever. The vacuum packaging is made of different PET materials that are considered to be the best from the environmental point of view and that can easily be recycled. Boxes are made of recycled cardboard and only environmentally approved colours are used at the printer’s. Malongo Foundation Since 2007, Rombouts & Malongo have run a Malongo Foundation whose aim is to work towards and support projects in healthcare, the protection of children and similar social issues in cooperation with local Fairtrade organisations. They annually support projects at different Fairtrade cooperatives in ecological cultivation, local transportation systems, etc. Zinzino Zinzino works continuously with environmental matters and is affiliated to the “Elretur” association that recycles and safely deals with old espresso machines. Zinzino is also a member of the Fairtrade association in Scandinavia. Zinzino has chosen to cooperate with Rombouts simply because they have an active ethical policy and a pronounced strategy for working mostly with farmers who are affiliated to Fairtrade. Rombouts first and also biggest in Fairtrade Rombouts & Malongo was the first coffee roasting house to start up cooperation with Fairtrade as early as 1992 and has since then been the leading roasting house of Fairtrade coffee in Europe. They had a unique commitment to Fairtrade farming right from the start and currently have personal relations with each cooperation and still visit and inspect the cooperatives each year. LARGE ESPRESSO 12 CL SMALL ESPRESSO 6 CL Would you like a large or a small espresso? We have pods made that are suitable for a small espresso and pods made that are suitable for a large espresso. The quantity of ready coffee you get from one pod, 6 or 12 cl, depends on how the coffee is ground. Small espresso pods contain extra finely-ground coffee that is tightly packed and it takes the water a long time to seep through, whereas pods for large espressos contain coarser coffee grains through which the water runs more easily. Important to select the right pods for the best flavour! In order to get a wonderful flavour from your espresso you must select a coffee pod for the correct volume. Aromas and flavours in the coffee are released at different times, some coming immediately while others are released at the end of the brewing. When the aroma flavours have finally been extracted, the caffeine starts coming out of the pod and this can give an espresso a bitter flavour! A pod that is intended for a small espresso must therefore never be used to obtain 12 cl coffee. The acidity level is higher and contributes to a fruity flavour and aroma with hints of red berries, blackcurrants and blackberries but has only a slight aftertaste. They are Organic Farming-certified and cultivate using no chemical fertiliser or pesticides. This means that the soil and thereby the coffee beans have an unbelievably pure flavour. Today, the world population drinks around 500 million cups of tea every day. Nowadays, tea is the most common drink in the world after water! A tree The tea bush is actually not a bush at all, but a tree when it grows wild in nature. When tea is cultivated by humans they do not let it grow higher than 1 - 1.5 metres and it then looks more like a bush. Picking takes place early in the morning while the nighttime dew is still around and only the small offshoots with 2 leaves and one bud are picked. A “bush” is picked 40-100 times a year and almost always by hand. Caffeine Generally speaking, a cup of black tea (12.5 cl) contains around 45 mg caffeine. The equivalent for a cup of normal coffee is around 95 mg caffeine. Black tea normally contains twice the amount of caffeine found in green tea. Herbal tea is usually caffeine-free. Storage Green tea Tea must be stored dry, cold and in a dark place in an airtight container. Black tea lasts the best while green tea loses its aromas more easily. The storage time can be lengthened by not exposing tea to the air, by using vacuum packaging for example. Malongo’s Tea Pods can therefore be stored for a full 2 years from the date of production. When green tea is produced the drying stage is taken out. The tea leaf is instead subjected to a great deal of direct heat, up to 200°C. This is done to deactivate the enzymes in the leaf and thereby also avoid the onset of oxidation (fermentation). After the first heating, the tea leaf is rolled, heated up (again) and dried. This means that the leaf stays green. Black tea People usually talk about infusions made from the tea bush camellia sinensis and the most common black teas are Assam and Darjeeling. When black tea is produced, the tea leaf has to go through the following four stages: • Drying: the leaf starts to wither and loses some of its moisture. • Rolling: the leaf is rolled and split so that the remaining moisture can react with the air. • Fermentation: the leaf undergoes a natural chemical process, enzymatic oxidation, when the moisture reacts with oxygen, the chlorophyll is broken down and the leaf then turns dark red. The flavour becomes slightly bitter and is therefore better suited to western palates. • Heating: the leaf is heated up and dried until it contains only around three per cent moisture and the fermentation process is thereby interrupted. 22 Herbal tea A herbal tea should mainly consist of the leaves, flowers, branches, seeds or roots of one or more herbs. There is nothing to determine what a herbal tea must contain. The ingredients could include normal tea leaves, but this is very rare. The tea is sold in boxes containing 12 pods and is also available in a big pack with 192 pods. 23 COFFEE SYRUP – a bit about syrup History & the market Usage As early as the end of the 1800s, several companies in the USA and Europe started to produce syrup and several of them have since grown into very large international companies. Coffee syrup saw its first increase in popularity in the 1930s when coffee, milk and coffee syrup became popular drinks in the state of Rhode Island that was trendy at the time, and nowadays it is a favourite throughout the USA. In Europe, coffee drinks made with coffee syrup became very popular during the 1980s and then spread rapidly to many countries. In Scandinavia, the use of coffee syrup has not increased strongly until the last 10 years, largely thanks to the increase in the café trend. One example is that Caffe latte today represents around 40 % of a café’s sales and that 1/3 of these drinks are flavoured with coffee syrup. Over the most recent years, the sale of home espresso machines and milk foamers has exploded and different coffee drinks are now being made at home with coffee syrup. Those who drink coffee are of course the biggest group that use coffee syrup, primarily for different coffee drinks such as cappuccino, caffe latte, frappuccino, machiatto, etc. Ice-cold coffee drinks or tea drinks have also become popular but mainly in the summer. The drink is then poured into a large glass filled with pieces of crushed ice. Since the ice has a tendency to reduce the flavour tasted, it is usual to increase the quantity of syrup by 1 cl. There is also a new trend in what is known as Steamers where one or more syrup flavours are blended with hot, foamed milk. The absolute biggest growth of all in the trend is Chai tea latte, which is now made in one minute thanks to the introduction of Chai tea syrup. Quality It is important for the taste that flavours come from natural raw materials (fruit, plants, spices, nuts, etc.) to give the syrup its best taste. Really strong black tea or real vanilla from Madagascar can never be replaced by additives. Real coffee syrup is made with 100 % pure sugar since this is the only sweetening agent that best brings out all flavours of natural raw materials. Good coffee syrup must have a high concentration for it to provide a rich flavour, aroma and sweetness but be used in a small quantity. Flavours Most manufacturers have a broad range but the vanilla, caramel and hazelnut completely dominate the sales to both consumers and the hotel and restaurant market. Make an espresso using Rombouts Brazil. Grate over a small quantity of lemon zest or peel shreds of lemon zest with a potato peeler. Drink and enjoy an espresso with a different taste. Cafè Cappuchoc 4 Espressos made of 100 g Ristretto or Manda Congo, Zinzino dark chocolate, 4 dl milk and 3/4 dl cream. Heat up 4 dl of the milk in a saucepan, add the rest of the chocolate pieces and allow them to melt while whisking. Add the espresso. Pour the drink in to warm cups or mugs. Top with lightly whipped cream and sprinkle over a little grated chocolate. Chocolate with dark Belgian chocolate Pour a double espresso (10 cl) onto 1-2 pieces of dark Zinzino chocolate at the bottom of a glass. Fill up with 2 dl foamed milk. Espresso Icecream/parfait Thoroughly whisk 2 dl cream. Whisk 2 egg yolks and 3 tbsp sugar until stiff. Blend a cold espresso into the egg mixture and then add the mixture carefully to the cream. Gourmet Caramell Cappuccino Caramell ice 2 -3 cl Caramel syrup, 1.5 dl hot frothed milk, 1 small espresso. 1/3 espresso, 1/3 warm milk, 1/3 milk foam in a coffee cup and nice with a bit of spice on the top. Blend 2 cl caramel syrup, 2 cl vanilla syrup and 1.5 dl milk and pour into a glass containing ice. Top with whipped cream. 34 Extra chai latte 3 cl chai tea syrup, 1. 5 dl warm foamed milk, 1 dl warm black tea. Vanilla latteccino 1 small espresso, 1.5 dl warm frothed milk, 2 cl vanilla syrup. Wiener Melange Make an espresso - best made with Ristretto. Then stir in 1-2 tbsp chocolate or cocoa powder. Fill up with warm, foamed milk. Serve in a glass or a large mug. Vanilla dream 1 small espresso, 1.5 dl warm frothed milk, 1-2 cl vanilla syrup, 1 cl hazelnut syrup. Iced caramel chai latte 3 cl chai tea syrup, 1 cl caramel syrup, 1.5 dl milk. Blend them all and pour into a glass containing ice. Gourmet Hazelnut 1 small espresso, 1.5 dl warm foamed milk, 2 cl hazelnut syrup. All water contains a small amount of minerals, metals and chemicals. Limescale is one of them, but the content varies with countries and regions. So-called soft water has a little and hard water has a lot. But as mentioned, where ever you live there is always some limescale present in your tap water and this will effect your machine in time. In espresso machines water passes through holes on the inside that are even smaller than 1 mm and limescale can block these holes. Limescale filter and descaling solution To make sure your machine will function for a long time you need to use a limescale filter such as the water filter that reduces the limescale content in your tap water. This filter also reduces bad smell or bad taste that could come from old water pipes. This filter should be changed to a new one every third month. The filter cannot remove everything so you therefore need to use a cleaning solution based on citric acid two times per year. These products are found in the Zinzino web shop. If you service your machine appropriately it will give you pleasure for many years without any problems. Zinzino Extra Warranty The normal warranty for the machine does not cover problems that are due to limescale. But with the Zinzino Extra Warranty any kind of problem that is related to limescale is covered. With this warranty we will send you both filter and descaling solution on a regular basis without any extra cost. The value of these products is approx 43€ per year. If you, against all odds, will have any problems due to limescale then we will send you a new machine- free of charge. How to get the Zinzino Extra Warranty? Sign up for the Zinzino Extra Warranty when you buy a new espresso machine. There will be a permanent sticker put under your machine to show it has the Zinzino Extra Warranty. Cost and validity The Zinzino Extra Warranty costs 5,50€ per month and 66,0€ per year. Filters and descaling solution are included at a value of 43,0€ per year. The Zinzino Extra Warranty is valid without any time limit at all, as long as you pay your monthly fee. The Zinzino Extra Warranty will however stop being valid 60 days after the last paid monthly fee. The rules for the Zinzinos Extra Warranty will not limit your normal consumer rights in any way. Contact If you have the Zinzino Extra Warranty and despite the use of filters and descaling solution have a problem with your machine then please contact the customer service department at Zinzino. 36 PRACTICAL INFORMATION ORDER INFORMATION You order your products via Zinzino’s website, www.zinzino.com. Log in using your ID/customer number and password and then choose Web shop and follow the steps as instructed. You can also order over the telephone or by letter, fax or email. Please state the following: your ID/customer number, your name, what you wish to order and your method of payment. All sales are paid for in advance. The prices in the Web shop are in your local currency and include VAT. Order forms • Order: Is a manual order for which you yourself choose the time and form of payment. • Subscription: Is a combined subscription to coffee/tea that you as customer can take out to receive the machine at a lower price. • Autoship/Automatic order: an automatic order is a standing order where you yourself tailor your order and select your favourite products. The order is sent to you on a monthly basis. If you wish to change the content or take a break, you must change the order at least one day before it is charged to your account. When an automatic order is changed, it will then remain according to your last order. This type of order can only be used by retailers and can only be paid for using a credit card. METHOD OF PAYMENT Payment card/Credit card. We accept the following payment cards: Visa, Mastercard and Dancard (Denmark). Using a payment card/credit card means that you attend to the payment at once and receive the delivery quickly. The payment card is usually charged immediately but, depending on the bank’s services, there may be a delay of up to one working day before the charge is seen on your account. Note that you must have sufficient funds on your account for the purchase to be successful. Digital invoice The invoice will be sent directly to your email address. If you have not received an email detailing your digital invoice within 24 hours of having chosen this alternative, please contact customer services. The digital invoice is delivered to the email address stated at the time of registration. We do also charge an invoicing fee. Paper invoice Using this alternative means that you are sent a prepayment invoice smoothly and conveniently to your letter box at home. We do also charge an invoicing fee. The paper invoice is delivered to the address that is registered for the customer/partner unless other information has been stated. If you would like to specify a different invoicing address, please contact your country’s customer services. Note that all payments are made in advance. Note that an order will not be delivered until the order has been paid for. 38 DELIVERY INFORMATION As a subscription customer, your invoice will be divided up and you will therefore pay every month. Goods will be delivered every two months or every three months, depending on which subscription you have chosen. Shipping will be charged for all goods. The goods will be delivered by parcel post to the nearest delivery place. A claim for an erroneous or damaged product must be made within 30 days. Enclose the return note and state the fault. If the fault is discovered after 30 days you must contact Zinzino immediately. A shipping charge, return shipping and other expenses will be levied for unclaimed packages. COMPLAINTS If you have a problem with your machine and it does not appear to be working, always contact our customer support for help. The support can usually solve most of the issues over the telephone. If, you are unable to obtain help over the telephone, support may ask you to send in your machine to have it examined and repaired if needed. If the machine is less than 3 months old, the machine may be replaced with a new one free of charge. RIGHT FOR CONSUMER TO CANCEL A consumer is entitled to a full return or exchange for a different product within 30 days (this applies if the product is still unusued). If exchanging for another product, the customer pays the cost of the return shipping. Enclose the receipt and state the reason for the exchange. If the delivery is delayed or if the ordered product is no longer available, the customer is entitled to cancel the purchase.
