Sweet Potato Rice Casserole
Servings: 6
1 can (8 ounces)
crushed pineapple
in natural juice,
drained (reserve
juice)
1 cup Minute White
Rice or Minute
Brown Rice,
uncooked
1 large egg, lightly
beaten
1 can (5 ounces) evaporated skim milk
1 can (15 ounces) sweet potatoes, drained
1/2 teaspoon ground cinnamon
2 cups miniature marshmallows
Preheat oven to 400∞F.
Measure reserved pineapple juice and add enough water to make
1 cup. Prepare rice according to package directions using juicewater mixture.
In large bowl combine pineapple, rice, egg, milk, sweet potatoes
and cinnamon. Mix well. Spread in 2-quart casserole dish. Top
with marshmallows.
Bake 20 minutes, or until marshmallows begin to brown.

Waterfowl Wonders:
Mallard Ducks
Mallard ducks are a very common, medium-sized waterfowl species
living throughout North America. They are actually common in other
parts of the world, too, such as Europe, Asia, Australia and north
Africa. They are larger than most people think, having a wingspan of
more than three feet. They typically weigh 2-3 pounds.
Mallards are one of the most easily-identified duck species in
living in Indiana. The males (drakes) have a bright green head with a
thin white collar around their neck when they are in their breeding
plumage, so it’s hard to mistake them for another type of duck. The
females are not quite as easy to identify because they have a mottled
brown coloration which looks very similar to other duck species.
Like most ducks, mallards live in and around wetlands, lakes and
rivers. They are called “dabbling” ducks, which means they feed
mainly at the surface rather than by diving for their food. Mallard
ducks eat snails, insects, worms, plants, seeds and even plant tubers.
When insects and other small prey creatures are scarce, they simply
eat more plant matter.
Most mallards do migrate south for the winter, usually stopping in
the southern U.S., Mexico and central America. However, some local
populations stay in Indiana year-round, visiting ponds, creeks and
other bodies of water that stay ice-free for the majority of the winter.
So don't be surprised if you see some mallards flying around
this winter!

MMM -- Monthly Military Memo
Honor Flight seeks to thank and pay tribute to veterans,
especially WWII veterans by bringing them to Washington DC
for a day of honor & remembrance at no cost to them.
Volunteers are welcome to help or donate. There are an
estimated 25,000 WWII veterans living in the Chicagoland
area—and we want to reach and honor each and every one.
There are many ways to help: Refer a WWII Veteran so we can
invite him or her to an upcoming flight. Volunteer your time to
help us with our flight logistics and other important tasks.
Make a donation to help us bring as many vets to Washington
as we can—the cost of the trip is approximately $600 per
veteran. As you reflect on all that our WWII veterans
have done for us, please consider what you can do for
them—before they pass into history.

How to Use
JUMPER CABLES...
When thinking of things associated with the word
“jump”, a few thoughts “jumping ship” and the song
“Jump”, “Jump” might as well and “Jump.” One
thing that may not pop into your mind however is
“Jump-Start”.
Whether lights were left on overnight or you’ve felt by Dan W. Randolph
a decrease in power, jump-starting a vehicle is
a tactic used to restart a dead battery. To jump start
your car you must have the proper tools.
Jumper cables are a pair of thick, electric cables fitted with clamps at
either end. One of the cables will either be red or orange, indicating the
positive (+) end. The other cable will be black, which is the negative (-)
end. You’ll need to have these with you to jump-start your car.
Find a Donor Car to Jump You. Hopefully you have a friend (or a
friendly motorist) who has offered to help you revive your car.
You need to have the cars parked close to one another. Now that both cars
are aligned and ready to go, make sure that they’re both in Park (or
Neutral for manual transmission vehicles) with the headlights, safety
hazards, radio, everything turned off. It’s also a good idea to engage the
parking brake for both cars.
Now that everything is shut off, it’s time to attach the jumper cables.
Before connecting the cables, make sure any corrosion on the batteries of
both cars are removed. You can do this by using a wire brush, a file or by
pouring some cola onto the corroded areas.
Now, looking at the car battery, you should see two posts, a red one
with a (+) for the positive side and a black one with a (-) for the negative
side. It is extremely important that you hook up the cables in the proper
order. The order is as follows:
•Connect the red clamp to the red, positive (+) plus of the dead battery.
•Connect the other red clamp to the red, positive (+) of the donor battery.
•Connect one of the black clamps to the black, negative(-) post of the
donor battery.
•Connect the other black clamp to a large, unpainted metallic part the
dead car’s engine block. Connecting the second clamp to the negative (-)
post of the donor battery could lead to sparking, which could cause the
hydrogen gas from the battery to ignite and possibly explode.
In the interest of personal safety, hook up the negative (-) clamp to an
unpainted, heavy metal part of the car as far away from the battery as
possible. When batteries start to go bad, hydrogen gas is released from
the chemical reaction inside the battery. That can create a probability of
an explosion occurring.”
Ladies and Gentlemen, Start Your Engines! Once you’ve properly
connected the jumper cables and have made sure that they aren’t near any
moving engine parts, such as belts, it’s time to start the donor car.
I recommend you let it idle for several minutes, so it has enough time to
charge the dead battery . Now, it’s time to start the dead car. With any
luck, the dead car will jump to life. Once it’s been revived, let it idle for a
few minutes to ensure a solid charge. Don’t turn off the formerly dead car
right after it turns over.
Now that your car is back in action, it’s time to remove the jumper
cables. Reverse the order from which you originally attached them, and
you’re good to go.
Having your battery dead is always an inconvenience. If it was caused
from leaving the lights on for an extended period of time, then you’re
probably fine to jump-start it and forget about it. However, if your battery
died for reasons that aren’t obvious, we recommend you bring it in and
we’ll take a look at it.

Forcing Flowering Bulbs
There are dozens of spring flowering bulbs that can be coaxed into
bloom in mid-winter, when you really need them. Some require
minimal effort, others require some pre-planning. Amaryllis, Freesia and
Tropical Narcissus, like paper whites, are simple. Pot the bulbs in soil
then pour in enough water to soak. Keep them at about 50 degrees in
indirect light for the first two weeks of sprouting. Then move them into
the bright direct light and provide warmth. You should have
flowers within four weeks.
Bulbs that require a chilling period include Narcissus, Hyacinth, Tulips
and Crocus. You can buy bulbs pre-chilled and ready for forcing or you
can do it yourself, but it takes planning. You can use shallow pots or any
container you choose as long as it has holes for drainage, fill the pot
about 3/4 full with peat based potting mix and squeeze in as many bulbs
as can fit. You can use one type or mix and match the bulbs. Plant the
bulbs flat side down and cover with about an inch of potting mix. If you
are planting tulips, leave the shoot tips poking out above the soil line.
Water them until you see it coming out the drainage holes. Throughout
the chilling period, the temperature needs to be around
35-45 degrees, most bulbs take about 10-15 weeks. When the shoots are
4-5 inches high, move the pots to direct sunlight where temperatures
reach 70 degrees to encourage budding.

Easy Eclair Cake
1 (16 ounce) package
graham cracker squares
1 (16 ounce) package
prepared chocolate frosting
In a medium bowl, thoroughly blend the pudding mix,
whipped topping, and milk.
Arrange a single layer of graham cracker squares in the
bottom of a 13x9 inch baking pan. Evenly spread half of the
pudding mixture over the crackers. Top with another layer of
crackers and the remaining pudding mixture. Top with a
final layer of graham crackers.
Spread the frosting over the whole cake up to the edges
of the pan. Cover, and chill at least 4 hours before serving.

At dinner, a father explains to
his son there are three types of
people in this world. There are
sheep that just go about their
lives in peace. There are the
wolves that cause the evil. And
there are the sheepdogs that
protect the sheep from the
wolves. His son Chris Kyle is a
sheepdog who earlier that day
protected his younger brother
from a bully. This lesson stays
with Chris as he fights
insurgents during four tours of duty and becomes the deadliest
sniper in American history. “American Sniper” grips you
with its intensity and you feel the stress Kyle must have felt in
making split second life and death decisions. In one scene, he
must decide whether or not to shoot a young boy who picks up a
rocket launcher and aims it towards a group of Marines.
Throughout the film, I wondered what it must have felt like for
the military who served with Chris knowing that he was
watching over them and protecting them. Early on in his career,
Chris earns the nickname “Legend.” All of his military success
does not come without a price. Time between his tours leaves
him wrestling with post traumatic stress. In one scene at an auto
repair shop, a Marine thanks him for watching over him and his
unit. Chris is cordial and polite but you can tell the meeting has
brought up some troubling wartime memories. Being home
leaves him restless thinking about the men and women he
should be protecting. He is plagued with guilt for those he could
not save. You agonize alongside his wife as she tries to reclaim
even a piece of the husband she knew.
In recent weeks, this film has become controversial. Filmmaker
Michael Moore tweeted that “all snipers are cowards” and some
dismiss the film as being “too pro-America.” Opinions like this
and those expressed in this column exist because people like
Chris Kyle defend our right to express them. For me, this is a
film about a military hero. It is also a reminder of the sacrifices
made by our military and their families. My advice is to ignore
the controversy and go see this film! On my scale as to what I
would pay to see it, “American Sniper” gets $12.

A Dog Tale Affair Fundraiser - March 13, 2015
It benefits each of our 1100 student-athletes who
participate in our twenty-two sports teams. An
exciting night featuring raffles, live and silent auctions, as well as
free food and a cash bar. St. Elijah Hall, Merrillville, 7-10:30pm,

Our success depends a lot on the generous donations of our
community. We typically have between 60-70 silent and live auction
items, but we would like to raise that number this year. No donation
is too small or too large. We can use any, and all things, from gas gift
