The Tanglin Times JANUARY 2015 Hola Chef Esmeraldo Tranquil retreat Sunshine Coast, Qld Australia Nestled into a secluded ridge and looking north over the glassy waters of Baroon Pocket Reservoir in North Maleny, Queensland, is a home that enjoys privacy, tranquility and extraordinary scenery. Architect Tim Cronin and builder Jaicon Construction have created a design that emphasises the interplay of interior and exterior, with robust matrials inspired by the site, and design solutions that respond to the sub-tropical environment. Clever features encourage passive cooling throughout. A panel window acts like a set of bellows to funnel a mountain breeze above the double timber and stainless main doors. A 2-metre deep saltwater pool at the centre of the home provides visual delight and cooling breezes to most rooms. Banks of louvres in split-level ceilings moderate both light and airflow. Staff News undisputed champions three times in a row: expogast 2014 Singapore’s national culinary team, for the second time in a row, became the overall champion at the Expogast Culinary World Cup in Luxembourg in November, and we are very proud of our own Executive Chef Louis Tay, for leading the team to glory. Beating 29 other countries for the prestigious title, it went on to win gold medals in the Hot Cooking and Cold Display categories. The Expogast Culinary World Cup is an international culinary competition and trade show, held once every four years, and was into its 12th instalment in 2014. The Singapore team won the competition twice previously, in 1998 and 2010. The culinary team of 2014 comprised of Chef Louis, and Chef Yew Eng Tong from the Ocean Restaurant, Chef Teo Yeow Siang from Lavish Dine Catering, Chef Jim Gim from The Club at Marina Bay Sands, Chef Triston Fang from Equinox Restaurant at Swissôtel The Stamford, and Chef Ivy Wong from Fairmont Singapore, along with eight assistants. The Singapore team was chosen by the Singapore Chef’s Association, of which Chef Louis is a member, and training began in mid-February. Chef Louis led the team as manager, with Chef Yew as team captain. They trained 20 hours a week, usually until the wee hours of the morning. For the Hot Cooking category, the competing teams were given five hours to prepare a three-course menu for 120 people, completely from scratch. The Singapore team’s winning menu had an appetiser of warm terrine of white halibut with blue lobster and scallop, lobster fritter, smoked eel tortellini with light crustacean cream of salicorne and caviar, and vegetable remoulade. The main course included a roast brine-cured pigeon breast with caramelised hazelnut, pigeon liver and duck pate, creamed cabbage with confit legs, dukka spice, pumpkin ginger mousseline and port wine jus. For dessert, it was baked William pear with zesty meringue, fromage blanc yuzu sorbet, and almond sable. In the Cold Display category, the team had to prepare a food showcase displayed on a rectangular table measuring three metres long. Items which were included had a seafood platter, a five-course gourmet menu, and a dessert showpiece. Interestingly, all the food items were actually prepared hot, were displayed cold, and glazed with aspic. A former participant who represented team Singapore, Mr Randy Chow, summed up the feelings of last year’s team perfectly: “Victory is sweeter knowing that we have beaten some of the world’s best.” Congratulations to the team, and to Chef Louis Tay, who has done not only Singapore proud, but The Tanglin Club as well. 9 Staff News EnErgY ConSErvAtIon AwArEnESS progrAm In November, Indika Fernando, the Club staff’s unofficial ‘green In the past few years, we have made significant improvements to ambassador’, gave presentations to all staff on the merits of energy technologies we adopt, such as integrating an energy-efficient conservation. A profile on Master Chef Esmeraldo Oteruelo Start with a base of Queen Elizabeth II, King Juan Carlos, and Queen Sofia. Add in a few handfuls of Arabian princes and top with a few Canadian premiers and you have the impressive list of guests Master Chef Esmeraldo Oteruelo has served in a distinguished career that spans nearly four decades and is peppered with numerous medals and accolades from around the world. We are proud to announce that Chef E (as he is affectionately known) will be arriving at The Tanglin Club for a limited engagement in January, so now you can add one more name to that remarkable guest list: you. While he is at the Club Chef E will assist Chef Louis and his team with their attention to detail in Mediterranean dining. He will also provide us with the unique opportunity to experience the rich heritage of Spain and Spanish food. Spain is close to Chef E’s heart and rightfully so. He was born in the small Spanish village of Pozos 12 where he learned first-hand about mixed farming (a combination of agricultural farming with the raising of livestock). The time he spent herding animals, planting and harvesting crops, and plowing the land formed his love of fresh ingredients early on, something that he continues to focus on in his cooking to this day. He also values his formative years in Spain for giving him the opportunity to work with an abundance of fresh delicacies, many unknown to most of the world, allowing him to learn at an early age how to appreciate the natural flavours and goodness in food. He discovered the importance of simplicity and focusing on the quality of his products as an essential basis for creating excellent dishes during this time as well. Esmeraldo has spent decades perfecting his selfproclaimed “Italian Mama”-style of cooking, honing his skills in Spain, Switzerland, Canada, Indonesia, China, and Hong Kong. He spent eight years as the Executive Chef at the American Club Singapore, where he was able to master Continental cooking to a standard that competes with his southern European Guest Chef | Food & Beverage favorites. Combined with his solid foundation of formal culinary training in Spain, Switzerland, and Canada, he has learned to blend various flavors and cooking styles with the finesse of a fine artist. And with so many years of technical fine-tuning and his breadth of multicultural experience, Chef E’s list of signature dishes is broad and diverse. You’ll find specialties ranging from Spanish, Mediterranean, Italian, and Southern French cuisines to Canadian and North American dishes—and each is as delicious as the next. Currently Chef E owns and operates a rustic getaway in Spain, Esme Tours, where he gives his guests the opportunity to experience a love affair with food and the land. There he focuses on the culture, customs, beliefs, food, and wine of Spain to keep the heritage and traditions he grew up with alive. A big believer in the Slow Food movement, Esmeraldo uses local, seasonal, and organic ingredients at Esme Tours, which provide guests with an authentic Spanish experience. We invite you to meet Chef E during his residency at The Tanglin Club. We have arranged several events, promotions, and demonstrations while he is here, so that you can get to know him and discover the wonders of Spanish culture and cuisine. Our Spanish promotions, which runs from 9 January to 7 February, will enable you to experience some of his traditional favorites such as paella, baby lamb, a variety of tapas and seafood dishes, and Spanish suckling pig, which we know will be a favourite for many, especially during our Spanish Lunch Buffet at the Churchill on Sundays. Still-maturing whisky from our standard ex-bourbon barrels is transferred to quarter casks and left to rest in our warehouse just a stone’s throw from the Atlantic shore. This process represents Laphroaig breathing new life into a once-defunct tradition: the use of the smaller cask size, which ensures increased contact with the oak, creating a soft and velvety edge to complement Laphroaig’s distinctive peatiness. On the nose the sensation is toffee and caramel, caused by the vanillas and tannins of the American oak, plus a dryness from the wood oil. The finish is long and alternates between this sweetness and smoke. $9.80 per glass the glenlivet 12 whisky 1:1 promotion (per glass) January-long, 5pm to 9pm Tavern and Wet Bar Enjoy the delicate and complex character of the 12 Year Old from The Glenlivet, with its vanilla notes and distinct smoothness. Rishaal was up against a very good opponent, SCC had done their homework very well and had picked a good final team which worked for them in Rishaal’s case as he lost 3-0. This left the Frenchman, Thomas, who had brought with him a bevy of beautiful girls as cheerleaders, he is so very French. Right from the outset you could see it was going to be a long match as both players were perfectly matched. As the game progressed, the British Club who had come down under the guise as invigilators but appeared to be more concerned with the temperature of the beer did come out with one interesting piece of commentary. As we were loosing 2-1 on matches and had lost each match 3-0 the count-back had now reversed in SCC’s favour so if we lost these matches we would also loose on count-back. As this statistic slowly filtered through to everyones’ beer-adjusted a letter to our Dear Cosmonauts brains, you could see the penny drop and the significance of As you are probably aware, we went into the last match this match. It was a tough match from the very with that last game we won the Cosmo league. beginning and each player had a very similar style so the game lasted a considerable time. Eventually Rob prevailed, Luckily someone had the foresight to let Puneet know who there was so much going on that I can’t remember the final was visibly relieved as by this time was trailing in his match score, it was either 3-1 or 3-2 to Rob. Established in 1974, the Section was one of the first Scuba clubs in the region, when recreational diving was still in its infancy. Members and guests convened at Tangles to reunite with dive buddies, old and new, and to commemorate the occasion. Many were delighted to see our old boatman Ah Chuan, who for almost 30 years, regularly ferried us out to dive the southern islands on Saturday afternoons. After a delicious meal, veteran divers recounted their experiences diving with the Section, regaling us with stories of the past, when diving infrastructure was non-existent, and coral reefs were pristine and sea-life abundant. Favourite memories included Malaysian expeditions during which Members had to cart huge boxes of food and condiments, cooking and washing equipment, and even a compressor. Those were the days when divers were far fewer in numbers and lobsters were in abundance. The small river town of Limbang, administrative center of the Fifth Division of the British Crown colony of Sarawak, was the pivot of the confrontation that Harold Macmillan told John F. Kennedy was as dangerous a situation in South East Asia as the Western Allies had seen since the Second World War. The Brunei revolt turned out to be the opening act of the diplomatic and military conflict between Indonesia and Malaysia known as Confrontation (‘Konfrontasi’). Although Dido Elizabeth Belle (Mbatha-Raw), an 18th Century English woman of mixed race, is raised in privilege by her aristocratic great-uncle (Tom Wilkinson) and his wife (Emily Watson), she is denied a proper social standing because of her skin colour. But when Dido falls in love with a young idealist lawyer (Sam Reid) who aspires to create positive change, she finds herself caught between two worlds. With everything to lose, she struggles to convince those around her – and society in which she lives – to overcome their biases and accept her fully. Only if she succeeds will she find true happiness in this exquisite masterpiece that also stars Miranda Richardson, Penelope Wilton and Matthew Goode.
