dialogue session
A Dialogue Session was held on Thursday, 27 November at
the Theatrette, and was attended by over 80 Members. The
Session included discussions on amendments to Rule 11(ii),
Rule 23(A), Rule 29(i) and Rule 29(ii), as well as topics on the
proposed Chinese Restaurant. After several presentations,
the attendees shared their views with the panel of General
Committee Members.
We thank the Members who attended the session and
provided us their feedback. For enquiries on the session,

The survey highlights will be made available to the
Membership via the magazine. To encourage Members
to respond electronically, an on-line submission stands a

A written response will be entered into a ballot for a

as well as Affiliate Members over the age of 16, may also
submit a survey. Copies of the written survey form will be

Singapore’s national culinary team, for the second time
in a row, became the overall champion at the Expogast
Culinary World Cup in Luxembourg in November, and we
are very proud of our own Executive Chef Louis Tay, for
leading the team to glory. Beating 29 other countries for
the prestigious title, it went on to win gold medals in the
Hot Cooking and Cold Display categories.
The Expogast Culinary World Cup is an international
culinary competition and trade show, held once every
four years, and was into its 12th instalment in 2014. The
Singapore team won the competition twice previously,
in 1998 and 2010. The culinary team of 2014 comprised
of Chef Louis, and Chef Yew Eng Tong from the Ocean
Restaurant, Chef Teo Yeow Siang from Lavish Dine
Catering, Chef Jim Gim from The Club at Marina Bay
Sands, Chef Triston Fang from Equinox Restaurant at
Swissôtel The Stamford, and Chef Ivy Wong from Fairmont
Singapore, along with eight assistants.
The Singapore team was chosen by the Singapore
Chef’s Association, of which Chef Louis is a member,
and training began in mid-February. Chef Louis
led the team as manager, with Chef Yew as team
captain. They trained 20 hours a week, usually until
the wee hours of the morning.
For the Hot Cooking category, the competing teams
were given five hours to prepare a three-course
menu for 120 people, completely from scratch. The
Singapore team’s winning menu had an appetiser of
warm terrine of white halibut with blue lobster and
scallop, lobster fritter, smoked eel tortellini with
light crustacean cream of salicorne and caviar, and
vegetable remoulade. The main course included a
roast brine-cured pigeon breast with caramelised
hazelnut, pigeon liver and duck pate, creamed
cabbage with confit legs, dukka spice, pumpkin
ginger mousseline and port wine jus. For dessert,
it was baked William pear with zesty meringue,
fromage blanc yuzu sorbet, and almond sable.

Master Chef Esmeraldo Oteruelo has served in a
distinguished career that spans nearly four decades
and is peppered with numerous medals and
accolades from around the world.
We are proud to announce that Chef E (as he is
affectionately known) will be arriving at The Tanglin
Club for a limited engagement in January, so now
you can add one more name to that remarkable
guest list: you.
While he is at the Club Chef E will assist Chef
Louis and his team with their attention to detail
in Mediterranean dining. He will also provide us
with the unique opportunity to experience the rich
heritage of Spain and Spanish food.
Spain is close to Chef E’s heart and rightfully so.
He was born in the small Spanish village of Pozos

where he learned first-hand about mixed farming (a
combination of agricultural farming with the raising of
livestock). The time he spent herding animals, planting
and harvesting crops, and plowing the land formed
his love of fresh ingredients early on, something that
he continues to focus on in his cooking to this day.
He also values his formative years in Spain for giving
him the opportunity to work with an abundance of
fresh delicacies, many unknown to most of the
world, allowing him to learn at an early age how
to appreciate the natural flavours and goodness in
food. He discovered the importance of simplicity and
focusing on the quality of his products as an essential
basis for creating excellent dishes during this time
as well.
Esmeraldo has spent decades perfecting his selfproclaimed “Italian Mama”-style of cooking, honing
his skills in Spain, Switzerland, Canada, Indonesia,
China, and Hong Kong. He spent eight years as the
Executive Chef at the American Club Singapore,
where he was able to master Continental cooking to
a standard that competes with his southern European

favorites. Combined with his solid foundation of
formal culinary training in Spain, Switzerland, and
Canada, he has learned to blend various flavors and
cooking styles with the finesse of a fine artist. And
with so many years of technical fine-tuning and his

signature dishes is broad and diverse. You’ll find
specialties ranging from Spanish, Mediterranean,
Italian, and Southern French cuisines to Canadian
and North American dishes—and each is as delicious
as the next.
Currently Chef E owns and operates a rustic getaway
in Spain, Esme Tours, where he gives his guests the
opportunity to experience a love affair with food and
the land. There he focuses on the culture, customs,
beliefs, food, and wine of Spain to keep the heritage
and traditions he grew up with alive. A big believer
in the Slow Food movement, Esmeraldo uses local,
seasonal, and organic ingredients at Esme Tours,
which provide guests with an authentic Spanish
experience.

choir section: after three years
The Tanglin Club Choir continues the tradition of carolling at The
Club’s Annual Christmas Tree Lighting Ceremony ever since its
establishment three years ago.
The Choir first performed three carols, namely Star Carol, Stille
Nacht (German version of Silent Night), and A Merry Christmas,
followed by a sing-a-long with the crowd present at the Tree
Lighting Ceremony. Although Star Carol was an unfamiliar piece
to many, the audience enjoyed this carol as much as popular ones
which seemed new and refreshing to them.
Overwhelming responses were received on the performance put
up by The Tanglin Club Choir. The audiences commented on the
tremendous progress made by the Choir since the Tree Lighting
Ceremony last year, and are looking forward to more performances
by them.

Bridge Pairs Championships, Saturday 15 November
“We are the Champions”.....that’s Anjna Beri and Jyoti Singh when they topped the scores of a gruelling fullday match of two sessions. As the lyrics of the song go “and bad mistakes I’ve made a few...but I’ve come
through”–that was so true of the champs who peaked at the right time. Raj Jayaram and Vimala Samuel came
a close second in the championships.
The full day of bridge (six hours in all with an hour’s break for a yummy lunch in the Tangles) proved too much
for most players who had to flee the card room immediately after the tournament, waxed and waned.
Well done and congratulations to the winners. For the rest of us, better luck next time.

Our happy Darts Day gathering on Saturday afternoon experienced a large turn-out of Darts Section Members
participating in a party-like atmosphere with food, fun, games, prizes, and chocolates.
We started with a delicious lunch of aloo chat, chickpea salad, butter chicken, mixed vegetable curry, pappadam,
briyani and wonderful healthy desserts. Kudos to the chef for the excellently-spiced buffet!
Many Darts Games were played starting with 501 Men versus Women. The Women won most of the games. The men
graciously accepted the loss, like gentlemen. Winners were: Nancy Lum, Nancy Ee, and Theresa Gaubier. As the
afternoon went on, the women gained momentum, winning more games. Mixed Doubles was won by William Ee
and Nancy Lum. Other games were played to hone the skill of accuracy: Bulls Eye, Mickey Mouse and Cricket.
In all, the large crowd thoroughly enjoyed themselves, only dispersing in the late evening. We invite all to join
us every second Saturday of the month for a day of lunch and happy darting.

THE TANGLIN TORDEPOES-Junior and Competitive
Swim Squad
The Tanglin Torpedoes is The Tanglin Club’s swim team. We
train on Mondays, Wednesdays, and Friday evenings at our
Club swimming pool. The team has a very exciting schedule in
2015, there are 10 swim meets in the year as we are involved
in two Swim League. The two leagues are: the Neptune League
and the Merlion League/
The Neptune League includes the following clubs; Singapore
Island Country club, British Club, Hollandse Club and Swiss
Club. The Merlion League includes the British Club, Marsden
Swim Squad, ACSian Falcon Swim team, and the American
Club.
The Junior Squad’s primary objective is to learn the skills
involved in swimming by developing each of the four competitive
strokes. Also, we introduce to them swim training, rules and
discipline. The Competitive Squad’s objective is developing
efficient and effective techniques while progressively extending
the volume of training. Swimming is both solo and a team sport.
It teaches the child important life lessons of self-discipline,
sportsmanship, time management, setting goals and achieving
them. The best reason for getting your children involved in
competitive swimming is the friendships that they will develop,
and teammates often become lifelong friends.

celebrating our 40th anniversary
The Scuba Section’s customary end-of-season
party in November was also a celebration of
our 40 th anniversary. Established in 1974, the
Section was one of the first Scuba clubs in the
region, when recreational diving was still in
its infancy.
Members and guests convened at Tangles to
reunite with dive buddies, old and new, and
to commemorate the occasion. Many were
delighted to see our old boatman Ah Chuan,
who for almost 30 years, regularly ferried us
out to dive the southern islands on Saturday
afternoons.
After a delicious meal, veteran divers recounted
their experiences diving with the Section,
regaling us with stories of the past, when diving
infrastructure was non-existent, and coral reefs
were pristine and sea-life abundant. Favourite
memories
included
Malaysian
expeditions
during which Members had to cart huge boxes
of food and condiments, cooking and washing
equipment, and even a compressor. Those were
the days when divers were far fewer in numbers
and lobsters were in abundance.

Dr Eileen Chanin is a Sydney-based historian and writer. She is currently
the Rydon Fellow of the Menzies Centre at King’s College London, and
Honorary Senior Lecturer at the University of New South Wales College
of Fine Arts, Sydney.
Her most recent book, Limbang Rebellion: 7 Days in December 1962,
deals with an early episode in the Indonesia-Malaysia Confrontation of
1963-1966. The book is co-published in Australia, Singapore, and the
United Kingdom.
Eileen is an award-winning author whose earlier books include Book
Life: The Life and Times of David Scott Mitchell (1836–1907) and
Degenerates and Perverts: The 1939 Herald Exhibition of French and
British Contemporary Art.
Awards for her books include the 2011 Alex Buzo Prize and the 2005 New
South Wales Premier’s Literary Awards Australian History Prize. She was
short-listed in 2012 for the Australian Historical Association Magarey
Medal for Biography.
She is currently writing a biography of Australia House in London to mark
its centenary in 2018.
Eileen Chanin’s Limbang Rebellion: 7 Days in December 1962 has
been honoured by the Royal Marines historical Society with the 2014

Between 8 and 12 December of 1962, world attention focused on a surprise rebel
uprising that sprang up in northern Borneo, where hostages were taken and threatened
with execution. The small river town of Limbang, administrative center of the Fifth
Division of the British Crown colony of Sarawak, was the pivot of the confrontation that
Harold Macmillan told John F. Kennedy was as dangerous a situation in South East Asia
as the Western Allies had seen since the Second World War. The Brunei revolt turned
out to be the opening act of the diplomatic and military conflict between Indonesia and
Malaysia known as Confrontation (‘Konfrontasi’).
