(34) 91 567 81 00 / Fax: (34) 91 571 37 33 – [email protected] / unwto.org CAM/60/NI - Restaurants Since its origins, Cuban cuisine has been the result of the confluence of the same factors that led to the formation of the nationality in the 19th century: the mixture of Spanish, indigenous and African customs and the subsequent influence of Asian and Yucatecan immigration. The national dish is ajiaco criollo, a combination of meat and vegetables cooked together, which varies due to the diversity of the ingredients used in its preparation. The most typical Cuban dishes aside from ajiaco are combinations of rice with different ingredients such as roast or fried pork, fried plantains or chatinos (fried pieces of crushed plantain), pork cracklings and beef hash. 9 World Tourism Organization (UNWTO) - A Specialized Agency of the United Nations Capitán Haya 42, 28020 Madrid, Spain.
