Braised Superior Shark’s Fin
with Crab Meat & Roe
Dear Valued Members
Happy New Year! Thank you for your warm support in 2014.
General Manager’s Message
We hope you have enjoyed the past year of festivities as much
as we have. Our special thanks to members who attended our
New Year’s Eve party and made it such a huge success. We are
excited to welcome 2015 since it marks Singapore’s Golden
Jubilee – an exciting milestone for the nation.
In the spirit of celebration, we have prepared a bounty of special
promotions and events. Coming up in January are eight exciting
new dishes we specially handpicked to add to our Chef’s
recommendations. Guests can look forward to greater variety
in our menus. Chinese New Year will be a special occasion at
the Club as we introduce brand new selections and a Chef’s
recommendation menu.
Come February, we invite you and your significant other to
enjoy a lovely evening with us on Valentine’s Day. Aside from
the romantic ambience and magnificent view, you can partake
in a scrumptious meal featuring tasty specials created for this
intimate occasion.
Then, in March, we’ll introduce our Nourishing Soup specials,
beautiful tonics made with care to soothe the body. Indulge in
wholesome creations like our Snow Pear soup. Snow pears make
a thirst-quenching soup and their cooling properties are perfect
for our hot climate.
Visit our lobby and you’ll notice the couplets by our main
doors. They have a unique significance because the messages
reflect our philosophies in life. In essence, we believe in the
importance of imparting wisdom to the next generation, as well
03
and treasures.

PAST EVENTS
Wines of the Month
Wines of the Month
Q1 2015
Champagne Paul Goerg, Brut Reserve
$108.00 per bottle
A complex nose of honey, flowers and preserved fruit
opens to roundness and persistence in the mouth. The
gentle finish is slightly spicy.
Michelle Richardson,
Marlborough Sauvignon Blanc 2014
$88.00 per bottle
An intense bouquet, reminiscent of ripe
gooseberries and melon with a hint of nettle.
The palate is full and inviting with the wild ferment
portion creating a viscosity that wraps around
the natural Marlborough acidity, while the cooler
ferment provides structure, fruit spectrum and
contributes to the lingering and moorish finish.
Dal Cero Tenuta Corte Giacobbe,
Soave Corte 2013
$88.00 per bottle
With a bright straw yellow colour, its bouquet is
striking for its clear floral-fruity scent with hints
of white-fleshed fruit. The palate is well-balanced,
savoury, with good weight, and with a bitter almond
finish classic to this grape variety. Pleasant also when
tasted before the meal as an aperitif, it goes well with
first courses, white meats, fish and vegetables.
Dal Cero Tenuta Montecchiesi,
Selverello Sangiovese 2012
$99.00 per bottle
A brilliant ruby red colour, with a bouquet of red
fruit, particularly cherry and raspberry, and spicy
hints. Delicate, balanced and lightly bodied. The
result is a light and fresh red wine which pairs well
with meat, game, and cheeses.

Brodie, Martinborough Pinot Noir 2009
$99.00 per bottle
2009 was a good vintage for Martinborough. Our
winemaker, James Walker, has produced a wellstructured, mouth filling wine, rich in dark fruits
with hints of chocolate and violets. This is a big
style wine with savoury notes typical of Brodie
Estate and the wines of the Martinborough region.
Excellent for drinking now or for cellaring for 3 to
8 years. Gold medal SIWC, Silver medal LIWC, 4
stars Michael Cooper
