Descripción del Proceso / Process description
Proceso:
1- Captura: el arrastre no debe ser prolongado aunque haya poca captura. Se descartan las especies
acompañantes
2- Lavado: se realiza en forma de lluvia con agua de mar y se conserva a temperaturas bajas para su correcto
cuidado
3- Traslado: se colocan los cajones con Merluza en el camíon equipado con refrigeración, donde serán
transportados a la Planta
4- Recepción: Se descargan los cajones con Merluza a la Planta
5- Lavado: se realiza en forma de lluvia con agua dulce higienizando todo el pescado
6- Descabezado: se retira la cabeza del pescado entero
7- Evicerado: se retiran las vísceras del pescado descabezado
8- Lavado: se realiza en forma de lluvia con agua dulce higienizando todo el pescado evicerado y descabezado
9- Fileteado: consiste en lograr unos filetes uniformes en espesor, retirando las espinas visibles y toda la piel.
10- Inspección: se realizan los controles según la ley y las normativa vigentes
11- Clasificación: se clasifica de acuerdo al tamaño y peso
12- Envasado: una vez aprobada la inspección, comienza el envasado. Se pesa y coloca de forma interfoliada en
una lámina de plástico azul cubriendo todo el producto con la misma
13- Se enmasta en bloques interfoliados de 7 Kg netos, colocando número de lote, fecha de producción y
vencimiento
14- Congelación: se congela en túnel estático
15- Se deposita en bodega a una temperatura de -22°C hasta su desembarco

Información de la Merluza Argentina / Argentinian Hake's information
La Merluza argentina (Merluccius Hubbsi) es un pez de la familia de los merlúcidos, que habita la costa oriental del
Cono sur, desde los 28º de latitud sur hasta la zona de las Islas Malvinas.
Posee una coloración gris claro en la cabeza y dorso, y color blanco tiza en la zona del vientre. Es de cuerpo
fusiforme, con la cabeza corta y de forma cónica.
Las aletas pectorales son cortas y anchas; presenta dos aletas dorsales, la primera con 9 a 12 espinas y la
segunda con 34 a 40, y una aleta pélvica de 36 a 41. La aleta caudal es trunca. Las escamas son de buen tamaño.
Las tallas máximas se registran en las hembras de la especie, que superan en tamaño a los machos a partir
del tercer año de vida, alcanzando hasta 95 cm de largo frente a los 60 cm de los machos.
Se reproduce casi todo el año, con dos períodos más marcados, durante el invierno cerca de la costa de
Cabo Frío, en Brasil y en verano en la costa norte de la Patagonia argentina. Habita a una profundidad media de
200 m2, en temperaturas en el orden de los 5º. Se concentra durante el verano en las aguas poco profundas al sur
del paralelo 40, retornando al norte en el invierno.
El macho alcanza su madurez con alrededor de 36 cm y con 40 cm en hembras. Se alimenta de peces más
pequeños (anchovetas, otras merluzas, etc.) calamares, zooplancton y también de especies que están sobre la
superficie por la noche.
The Argentina Hake (Merluccius Hubbsi) is a fish of the family of the merlúcidos, inhabiting the
