In 1951 the McCaghey family raised 9 birds to sell for Christmas. Over the
years, 3 generations have carried the business from strength to strength
and it now employs over 60 people, supplying a wide range of free
range, whole turkey, everyday packs and bronze turkeys for Christmas.
They’ve been working with Aldi since 2007.
Turkey Fajitas
Ingredients
• 375g Turkey
Breast Steaks
• 300g Jar
Tomato Salsa
• 500g Jar Chilli
Cooking Sauce
• 170g Sour Cream
• 2 Red Onions
• Juice of 1 Lime
• 1 Green Pepper
• 100g Grated
Cheddar Cheese
• 1 Red Pepper

• A little Olive Oil
Make it
1. Pre-heat the oven to 160°C/320°F/
Gas Mark 3. Cut the turkey into strips,
cook in oil, add cooking sauce and cook
uncovered for 15 minutes. Peel the onions,
cut in half and slice into medium slices.

Ingredients
• 400g Irish Turkey
Breast Mince
• B
ungees Seeded Buns,
toasted
• 1 Onion, ¼ diced and
½ sliced
• Caramelised Red
Onion Relish
• 1 Iceberg Salad Bag
• ½ Garlic Clove, crushed
• 1 Tomato, cut into thin slices
• Sea Salt and Black Pepper
• Irish Mayonnaise
• 1 Egg White, lightly beaten
Make it
1. Mix the turkey mince, beaten egg white,
diced onion, crushed garlic clove and
a pinch of salt and black pepper. Blend
together until the mince is fully coated.
2. Divide the mixture into 4. Take 1 portion
and roll in your hands to make a ball.
Leave it in ball form before cooking.
Repeat this process for the other
3 portions.
Turkey Roulade
3. Add the ball of mince into a hot pan
with oil. With a spatula push the ball
flat onto the pan to create the burger
shape. Season with salt and leave for
4-5 minutes, then turn and repeat
the process.
4. Toast the bun and dress with mayo,
relish and lettuce.
5. Add the burger, top with sliced tomato
and finish with the top of the bun.

• 4 Irish Turkey Steaks
• 1 small Onion
• 75g Cranberry Sauce
• 1 stick Celery
• 60g Fresh Stuffing
• Salt and Black Pepper
• 1 small Carrot
• 30g Walnuts
• A little Sunflower Oil
Make it
1. Pre-heat the oven to 200°C/400°F/
Gas Mark 6.
2. Flatten out the turkey steaks with a
rolling pin between some greaseproof
paper. Peel the carrot and onion, chop
them and the celery into small dice.
Chop the walnuts into small pieces.
3. Add the vegetables, walnuts, stuffing
and the cranberry sauce together in a
bowl, season and mix well.
Make your
meal complete.

4. Divide this mixture into 4 and spread
over the tops of the turkey steaks.
Carefully roll the steaks up and secure
with some tooth picks. Fry the turkey
parcels in some oil to brown the outside.
5. Transfer to a baking tray and bake in the
oven for 20-25 minutes. Allow to cool
slightly, remove the sticks and carve.

200g King Prawns
100g Specially Selected Asparagus Tips
1 x large Clove of Garlic, peeled and finely chopped
200ml Double Cream
80ml Baron Saint Jean White Wine
6g Fresh Parsley, chopped
12ml Lemon Juice
Black Pepper
A little Olive Oil
Specially Selected Parmigiano
Reggiano Cheese to serve
How to prepare it...
King Prawns
Cook the pasta in a large pan of boiling
water as per the instructions on the pack –
for 8 minutes – then drain well. Meanwhile,
chop the asparagus into chunks. In a large
frying pan or wok, sauté the prawns and
the chopped asparagus in a little oil for
3 minutes, add the chopped garlic and cook
for another minute. Add the cream, wine,
parsley and lemon juice, cook for another
minute until it starts to thicken. Add the
drained pasta, season with some black
pepper and heat through gently.
Serve alongside shavings of the
Parmigiano Reggiano.

How to prepare it...
Chop up two of the blocks of
chocolate and grate the third.
Put the egg yolks and caster sugar
into a bowl and, with an electric whisk,
beat until the mixture is pale and thick.
What you’ll need...
• 75g Moser Roth 85%
Dark Chocolate
• 2 x Egg Yolks
• 35g Caster Sugar
• 20ml Napoleon Brandy
• 150ml Fresh Double Cream

Put the cream into a small saucepan
and slowly bring to the boil. Pour the
boiling cream over the egg mixture
and whisk well. Sprinkle in the
chopped chocolate and mix well
to melt, when it’s all melted stir in
the brandy.
Pour the chocolate mix into 2 pots
and allow to cool, then refrigerate.
Serve sprinkled with the grated
chocolate. Great served with some
fresh raspberries.
