LET’S GET COOKING
QUICK PORK PAN FRY
A deliciously
warming dish
YOU WILL NEED:
500g pork tenderloin fillet
250g chestnut mushrooms,
sliced
1 tbsp plain flour
2 tsp dried rosemary
3 tbsp olive oil
1 garlic clove, peeled & finely chopped
300ml vegetable stock
METHOD:
1. Cut the pork into finger-thick slices.
Tip the flour & rosemary into a large plastic food bag, add
some salt & pepper & the pork & toss until the meat is
well coated.
2. Heat 2 tablespoons of the oil in a large frying pan, add
the pork & fry for about 3-4 mins until nicely browned on
both sides. Remove from pan.
3. Heat the remaining oil in the pan & add mushrooms &
fry until they start to soften, sprinkle in the garlic & return
the pork to the pan with any flour remaining in the bag.
Stir in the stock & bring to the boil. Simmer for 5 mins or
until the pork is cooked. - Serve with crusty bread.
BANANA & CUSTARD POTS
A quick,
no cook treat
YOU WILL NEED:
2 large bananas
15g plain chocolate grated
3 tsp instant coffee granules
½ a 250g pot of mascarpone
250ml fresh vanilla custard
100g sponge fingers or trifle sponges
1 tbsp icing sugar
METHOD:
Put the coffee into a small bowl & dissolve in 150ml boiling
water.
Set out 4 sundae glasses.
Whisk together the mascarpone, custard & sugar until
smooth.
Dip the sponge fingers into the now cooled coffee
for a few seconds until soaked but not soggy, then put
into the bottom of the sundae glasses to make a decent
layer of sponge at the bottom of each glass.
Spoon over a layer of mascarpone custard then top with
some sliced banana & a sprinkling of chocolate, repeat
the layers to the top of the sundae glass then chill in the
fridge for 10 mins before serving.

MOTORING MONTHLY A DAY AT THE RACES

My wife insisted that Brands Hatch would be very cold in March…I was in the habit of marshalling for the BRSCC and had sufficient
experience to know that a small motorbike was the ideal method of getting to the circuit; at big meetings it used to be best with traffic jams.
Thus I found myself aboard a Honda ST70 ‘folding’ bike, clad in all kinds of wet weather gear, with a steel framed rucksack on my back
which was packed with cheese sandwiches and a flask of my wife’s green pea soup.
The practice went well, with a few incidents at Dingle Dell corner, the post at which I was a flag marshall. The main race was for Formula
5000 cars which were powerful, handfuls of cars with large production engines in chassis of varying capabilities; some were good but most
were terrible. Their practice was the usual combination of ribaldry about how pathetic some drivers were, and dangerous, and how talented
were our heroes. The sight of Peter Gethin, Trevor Taylor and David Hobbs at full chat through Westfield bend would thril even us hardbitten critics.
Eventually practice was completed and we settled down to lunch in our woodland setting. Gloves came off shaking hands and I poured the
soup…something had gone wrong for it was a luminous green and it tasted foul. I returned it to the rucksack.
The F5000 race transpired to be monumental dust-up between Peter Gethin in a McLaren and Trevor Taylor in a Surtees and they pulled
out a substantial lead over the other competitors. Soon they started to pass the ‘dunces’ at the rear of the field, and as we followed their
progress we realized that they were closing on a Chris Warwick-Drake in an immaculate Cooper 5000. As a driver he left a good deal to be
desired, and sure enough, as he approached us from Westfield he was overhauled by Gethin and Taylor at a rate of knots. Warwick-Drake
saw the blue flag, which let him know that he was about to be overtaken, checked his left mirror, saw Gethin bearing down on him, swerved
right to let him through and collected poor Taylor. Bits of car flew in the air and Drake swerved left and pushed Gethin into the armco, where
his car was destroyed. The whole unfortunate episode was over in a second. Two expensive cars were in bits, and amazingly, Drake
managed to limp off the scene. This was fortunate because I suspect that if either Gethin or Taylor had been able to lay hands on him, he
would have been throttled. As it happened, when the ‘incident’ Marshalls arrived at this scene of mechanical carnage both drivers were,
thankfully, unhurt. Suddenly W-Drake’s Cooper appeared again, chugging slowly, looking at the damage that he had inflicted. I thought for a
moment that he was going to stop, but he saw Gethin’s expression and accelerated away to hide in the pits…It was a long day and dusk
was approaching as I rode the Honda homewards. As usual I headed towards Ightham and pulled sharply right, across the oncoming traffic
and sped up the steep hil . The front wheel left the ground, I had no control and hit the wing of an oncoming car, bounced left, hit the verge
again but this time was launched into the air and passed over a barbed wire fence into a grassy field. I landed smack on my back…I lay in
some pain as the rucksack frame had taken most of the impact and had, I imagined, driven the steel frame into my body. I could feel the
warm blood oozing down my back. ‘Are you all right’ asked the voice of one of the motorist’s that I has assaulted. I put my hand to the
wound on my back and we both looked at it in amazement. My ‘blood’ was bright green…’Don’t worry’ I said ‘it’s only my wife’s soup!’
