medieval times. The period of lords and
peasants, what a paradox!

Aludimos en este ÀCID a todo lo que nos
remite a lo medieval. Época de señores y
campesinos, ¡qué paradoja!
What peasants we are, our number one
mission is to watch over our land, our
fields. This is a season when we spend a
lot of time at the farms. We prepare the
campaign, we monitor the trees and we
can already predict what the future holds
in store for us, except for the bad weather
that is.
Como campesinos que somos, nuestra
principal misión es velar por nuestras tierras, nuestros campos. Esta es una temporada en la que pasamos muchas horas en
las fincas. Preparamos la campaña, observamos los árboles y ya podemos predecir

of the period full of colds
and seasonal allergies. Our
immediate reaction is to
go to the nearest pharmacy and buy an
antihistamine to alleviate the symptoms
of sneezing, itchiness and puffy eyes. The
problem with this type of medicine is
that it doesn’t make the problem go away;
it just hides the symptoms for a few hours.
Whereas, natural remedies help us from
inside out, by fighting off the allergies

- For the base 1 cup of raw peeled almonds
1 cup of walnuts
8 pitted dates
1 small spoonful of recently ground flaxseed
1 pinch of sea salt
- For the apple cream and the topping 1 apple, washed
1 lemon, the juice
1 cup of raw, peeled almonds that have been left to
soak overnight
1/4 small spoonful of vanilla beans
1/4 small spoonful of turmeric
1 small spoonful of recently grated ginger
2 soup spoonful’s of liquid coconut oil
1 glass of water
INGREDIENTeS

apple pie recipe includes the benefits of dried fruit and nuts and, of
course, apples. This fruit helps protect bones as it contains boron and
phloridzin, a flavonoid that is only found in apples. Apart from fighting
off allergies, apples help prevent Alzheimer’s, seeing as the quercetin
protects cells from harmful free radicals.

ingredients in a food blender
and blend them all together
until you get nice smooth and
elastic dough. Put the dough on the base
of a rectangular cake mould that has
a removable support ring. Put it in the
fridge while you prepare the cream.

For the cream

Mix half the lemon juice and the rest of
the ingredients, apart from the apple, in
a food blender and blend it all together
until you get a smooth mousse.
Combina la mitad del zumo de limón y el
resto de ingredientes, menos la manzana,
en una batidora de jarra y bate hasta obtener un mousse suave.
Cut the apple up into halves, remove the
core and cut the rest of it into thin slices.
Paint the apple slices with half the lemon
juice so that they don’t go brown.
Corta la manzana en dos mitades, quítale el
corazón y córtala a rodajas finas. Con la mitad del zumo de limón pinta las rodajas de
manzana para que no se oscurezcan.
Remove the base from the fridge, pour
the mousse on top of the base and
decorate it with the slices of apple. Put it
in the fridge for four hours. Take it out of
the mould and serve.
Saca la base del frigorífico, vierte el mousse
sobre la base y decora con las rodajas de
manzana. Reserva en el refrigerador durante unas cuatro horas. Desmolda y sirve.

fashion designers, from
New York to Milan. They
come in various styles, more classic
models and others that are more up-todate and innovative, but always with a
pointed toe. There is no doubt about it;
pointed toes dominate the shoe fashion
scene this season.

Middle Ages, the measurements for the

13 cm for the plebeians, 30 cm for the
gentlemen and 60 cm for nobility.

Burriana
The conquest of Burriana was crucial so that Jaime I could take control of Valencia, the capital of the Turia River. Its strategic position and its economic and cultural standing made our town a decisive point for the Conquest.
La conquista de Burriana fue crucial para que Jaime I se hiciese con Valencia,
la capital del Turia. Su posición estratégica y su importancia económica y
cultural hacían de nuestra villa un punto estratégico para la conquista.

Jaime I reached Burriana in mid-May,
1233, besieging and conquering it on the
16th of July.
Jaime I llega a Burriana a mediados del mes
de mayo de 1233, asediándola y produciéndose su conquista el día 16 de julio.
After his victory, 7032 Muslims left
Burriana, but this doesn’t mean that they
had all been living in the town, within
its walls, but rather that they had sought
refuge there fleeing from the war. They
were given 5 days to take whatever they
could carry with them. Some of them
established the town of Mascarell. After
having settled in Burriana, the king
granted the Town Charter on All Saints’
Day in 1233. Jaime I expelled the moors
from Burriana and Valencia, but only
from inside the town and city, not the
surrounding areas, because he needed
a few towns with defensive walls where
his own troops were protected and safe
to continue on with the reconquest of the
Kingdom of Valencia.

que vivieran todos en la ciudad, dentro de
las murallas, sino más bien que se habían
refugiado allí dentro, huyendo de la guerra.
Se les concedió 5 días para llevarse consigo
lo que pudieran portar encima. Parte de
ellos fundaron la localidad de Mascarell.
Después de establecerse en Burriana, el
rey otorgó la Carta Puebla el día de Todos
los Santos de 1233. Jaime I únicamente expulsó a los moros de Burriana y Valencia,
pero solo de dentro de las ciudades, no de
los alrededores, porque necesitaba unas
poblaciones amuralladas donde estuvieran protegidas y seguras sus propias tropas
para proseguir la reconquista del Reino de
Valencia.
The case of Burriana is very significant,
because apart from being the most
important town of the Fueros (charters)
of Aragón, it was crown land, which
clearly proves the intentions and the
preferences of the king, with regard to
our town.
Es muy significativo el caso de Burriana,
porque además de ser la villa más importante de las de los Fueros de Aragón, era
del dominio real, por lo que muestra, bien a
las claras, las intenciones y preferencias del
rey por nuestra ciudad.
The conquest of Burriana seemed to be
crucial for the subsequent conquest of
Valencia, seeing as the fortress of our
town was used to begin operations to
reach the capital of the Turia River.
La conquista de Burriana parecía estratégica para la posterior conquista de Valencia,
pues la fortaleza de nuestra villa permitía el
inicio de operaciones para alcanzar la capital del Turia.
Jaime I of Aragón began by reconquering
Morella and Burriana, after that his
victorious troops attacked Peñíscola, the
castle of Xivert, Cervera and Almazora.
Jaime I de Aragón comenzó reconquistando Morella y Burriana, después sus tropas
entraron victoriosas en Peñíscola, el castillo de Xivert, Cervera y Almazora.
The city of Valencia surrendered on the
28th of September 1238 to the disgust of
the magnates who had been hoping to
seize the city, take it by storm, ransack
and loot everything, just like in the city
of Mallorca years before. On the 9th of
October, Jaime I got into Valencia and
three days after that he began to divide
up the houses and the land of those who
had been deported.
La ciudad de Valencia se rindió el 28 de
septiembre de 1238 ante el disgusto de los
magnates que esperaban entrar en la ciudad por asalto y someterla a un saqueo total, como se había hecho años antes con la
ciudad de Mallorca. El 9 de octubre, Jaime I
entraba en Valencia y tres días después empezó el reparto de las casas y de las tierras
de los que habían sido deportados.

the Reyes Católicos (Catholic Monarchs),
when the “Santa Hermandad” (a holy
brotherhood) was created. Its task was
to help in any type of emergency and its
members wore waistcoats that revealed
the green sleeves of their shirts underneath.
These people were known for not being
very punctual, because whenever they
arrived at the scene of an emergency the
misfortunes had already occurred or, the
locals from the village had already resolved
the matter.

In this period, people used bags made out of
cat skin to keep their money in. In fact, these
bags were commonly known as “cats bags”.
To protect their wealth, Spanish citizens hid
these bags among the layers of clothes they
wore. This is where the expression of “gato
encerrado” (locked up cat) comes from,
although perhaps we should call it a “gato
escondido” (hidden cat).
En esa época, era habitual la utilización de
bolsas hechas con piel de gato donde la
gente guardaba su dinero. De hecho, a dichas bolsas se las llamaba popularmente
“bolsas de gato”. Para proteger sus riquezas,
los ciudadanos españoles escondían estas

The origin of this expression goes back
to adopting a child in the Middle Ages,
a process that, in those days, involved a
specific ritual: the adoptive father had to
put the child that he wanted to adopt inside
the sleeve of a shirt, that of course, was very
baggy, and take it off over the child’s head.
Once it was off, the father would give the
child a big kiss on their forehead as a sign of
his fatherhood.
El origen de esta expresión se remonta a la
adopción de un niño durante la Edad Media, un proceso que, en aquellos tiempos,
requería de un ritual concreto: el padre
adoptante debía introducir al niño que deseaba adoptar dentro de la manga de una
camisa que, por cierto, era muy holgada, y

éste salía, el padre le daba un fuerte beso en

because although it was big, it could not be

take the corpse to a neighbouring town so
that they wouldn’t have to pay the fine.

(the blank weapon), seeing as the weapons
still didn’t have any type of emblem or
shield on it.

The Castle has also been witness to
famous historical figures: King Fernando
de Antequera, Saint Vicente Ferrer… The
town has seen how King Jaime I came
into the town to begin the Reconquista
(Reconquest of Iberia), after intense

nobleman Blasco de Alagón. In 1270 it was
taken over by the Kingdom of Valencia
and in the Corts Valencianes (the main
legislative body) it always held the place
of protocol of being the First Villa of the
Kingdom, just after Valencia and Játiva.

autonomous vehicle that is at the service
of users. The company nuTonomy wants
to launch a fleet of self-driving taxis to
work full out in 2018. At the moment, they
are limited to just six square kilometres
on public roads, in the financial district
One North.

have always been carried out with test
drivers on board all the vehicles. The cars
use sensors to detect objects around the
vehicle, they have a program to predict
how these objects are going to move and
accordingly it chooses the speed and the
safe course to follow for the car and the
pedestrians.

In the Middle Ages, eating pork stood for
wealth, nobility and power… It could be
said that this animal has accompanied
man since the very beginning and it has
satisfied many of man’s needs at every
stage of history, up to the point that it has
become an essential food item for all of

simbolizaba riqueza, nobleza, poder… Podemos decir que este animal ha acompañado al hombre desde los inicios y ha satisfecho, en cada etapa de la historia, muchas

Although it is the Roman Empire that
is associated with the legacy of Iberian
ham, it was in the Middle Ages when
this food caught on among the whole
population. The Romans liked it so much
that the emperors Augustus and Agrippa
minted coins in the shape of ham. Soon
it became one of the leading Spanish
products that were exported to Rome
and it was consumed by high society on
special occasions such as banquets or
parties.
